This fast, delicious, homemade BBQ Chicken Pizza will put any delivery pizza to shame.
If I have one supreme food weakness in this life, it’s going to have to be pizza. There is nothing that makes me happier than the crispness of the crust, the oozy cheese, the tangy sauce and the satisfaction that comes over me as I indulge in the perfect comfort food.
Fast forward to this moment in time as I just finished my “lose weight because we are going on a cruise this summer” work out and I am getting ready to serve up yet another bowl of brown rice and chicken. Pizza is a faded memory at this point as my husband and I are both on the path to eating healthier and incorporating (ridiculously difficult) exercise into our daily routines. Every day. Every. Day. …… (sigh) …..
As we acclimate to our new lifestyle and joke about the indulgences that we miss, there is a measure of reality that intrudes on our perfect physique fantasy and we will call this Real Life. We are two people who have spent a lifetime enjoying food and the idea that we would suddenly stop and never go back to eating the dishes that we both enjoy so much is just not going to happen. Instead, we are learning the word ‘moderation’. I’m sorry, I didn’t mean to use a bad word in this post but it’s and inevitable lesson to learn. So while embracing this new-fangled invention called ‘moderation’, we are learning that pizza does not have to be off our menu, it just can’t be ON our menu three times a week.
Change. Gotta love it …
BBQ Chicken Pizza
Now, I had some homemade pizza crust in our freezer but I don’t have any pictures to go along with the recipe so I will save that for another day. If you have a pizza dough recipe you enjoy, go ahead and make that up as you normally would or if your grocery store bakery section sells fresh dough, give that a try. You certainly can use a ready-made pizza crust from a can or one that is sold as a shell, whichever makes you happy.
Preheat your oven to 500 degrees. Once you have your dough rolled, stretched and ready to go, shape it to fit your preference. Some people like rectangle pizzas, some round, some on a pizza stone, some on a pan, some just in the oven. For my purposes on this post, I used a large cookie sheet and formed my crust to fit as needed. Drizzle a bit of olive oil on the crust and spread around with a basting brush or get all into like me and use your fingers.
Once the crust has been oiled, sprinkle with salt and pepper. Take this opportunity to add a bit of extra smokiness and sprinkle lightly with a bit of smoked paprika or Ancho pepper powder.
Grab your favorite BBQ sauce, homemade or from a bottle, and spread a light, even layer of sauce over your dough.
At this point, start piling on the good stuff!! I usually add more BBQ sauce to my shredded chicken and when well mixed, add that onto my pizza.
Layer with red onion slices, feta cheese, bacon, spices and then top with mozzarella cheese and bake until golden brown and bubbly.
Remove from the oven and sprinkle with chopped cilantro and maybe some left over feta.
Pizza is not the enemy, pizza is our friend and it understands that separation will make the heart grown fonder. And the stomach grumbling louder! So even though it’s off the menu more often than it is not, a fresh homemade pizza beats out a greasy, delivered mess any day of the week. Take the time to make your own pizza with your family and you will quickly see the difference. Plus it’s a fun way to get the kids involved in the kitchen and maybe a sneaky way to sneak some vegetables their way too. Any way you slice it, it’s a win / win choice.
