I am the first person to admit that an amazing, from scratch baker.. I am not. I try but to date, that amazing gift has yet to blossom forth from me. I also am unable to keep ivy alive for more than 5 minutes and I perpetuate some weird mental block when it comes to remembering to buy bagged ice when necessary.
Yup. That’s even with the shopping list in hand, a reminder text from Big Scary Mike and sometimes even a live phone call.
There are some people in this life who can make space shuttles fly and then there are people like me.. perfectly nice people… whose crowning accomplishment comes in the form of being able to read instructions off the back of the chocolate brownies box. #thisgirl
I am not ashamed of this, some people just aren’t great bakers. The flip side is that I can make a pan of homemade macaroni and cheese that will knock you into next week. Life is all about give and take and I have absolutely no remorse in taking help from Betty Crocker and the like. After all, who’s going to care about quibbling over bragging rights when you’re busy shoving a damn good brownie down your throat?
So I will take my box of brownies and as I explain to Haley (aka.. dog #2), Momma’s just going to swirl in the magic.
As you can, she’s my co-pilot on this trip.
Boxed brownies are great but stir in a few additions and you have A-MA-ZING, chewy, extra-fudgy squares of sinful chocolately goodness!!!!
And if you are one of the Blessed People who can bring forth delicious baked goods from scratch, consider adding in a few extras next time .. I promise you won’t be disappointed.

Best Fudgy Chocolate Brownies
- 1 box of your favorite brownie mix and all necessary ingredients per box instructions
- 1/3 cup caramel sauce (like for ice cream topping)
- 1/2 cup mini chocolate chips
- 1/2 cup pecans or walnuts , chopped
- 1/2 tsp instant coffee (optional)
Prepare your brownies as instructed on the back of the box
Stir in extra chocolate chips and chopped nuts and coffee if using
Pour into a prepared 9x9 baking pan
Smooth so brownies are even
Pour caramel sauce over top in even lines and when done drag knife through the lines and into the batter
Bake as instructed
When done, remove from oven and let sit 20 minutes
