This Blackberry Peach Yogurt Popsicle is the perfect sweet treat to celebrate the warmer weather. With only three ingredients, it gets no easier than this!
Do you ever get in the mood for something sweet but then you make yourself suffer without anything because you are watching your calories and you know if you unleash yourself you will end up inhaling an entire cake in one sitting? Or are you melting in the ridiculous heat index of this years summer weather and just need something cool and refreshing to munch on? Me too… to both!
This summer has been the hottest we have had in the past few years and either I was going to start eating a gallon of ice cream A DAY or I needed to find a healthier alternative to keep my sweet tooth in check. What’s a girl to do? Grab some popsicle molds, some yogurt and a healthy mixture of fresh fruit and here we have the perfect solution to a hot day sugar snack attack!!
These homemade popsicles are so easy to make, they are mistake proof. Combine your yogurt and honey first, lightly stir in your fresh fruit puree (don’t mix in completely and you will have pretty swirls) and then carefully spoon the mixture into your molds. Freeze overnight and you have a refreshing, sweet treat for the days ahead. The best part? You can make these using any flavor of yogurt you prefer and certainly with any fruit you like best. I had peaches and blackberries on hand so TA-DAAAAA!!!!
Experiment, have fun and stay cool!
- 1 1/2 cup blackberries , fresh or frozen
- 2 peaches , fine diced
- 24 oz yogurt , flavor of your choice (I did vanilla for these)
- 2 tbl honey
- Popsicle molds
In a large bowl, combine yogurt and honey then set aside
Core peaches and then dice the fruit into small pieces and pour onto yogurt mixture. Do not stir
Using a small food processor (or a knife and cutting board), lighly pulverize blackberries but leave small chunks
Transfer blackberry puree to yogurt bowl and lightly fold blackberries and peaches into the yogurt mixture. If you do not mix too aggressively, you will end up with pretty swirls in your yogurt popsicle.
Carefully spoon mixture into popsicle molds and freeze overnight
To remove popsicle from mold, run popsicle mold under warm water for 10-20 seconds and then gently remove popsicle
Serve immediately with a smile!
