Words cannot express how life changing it is to make your own peanut butter, let alone this easy, creamy Roasted Cashew Butter!!! Walk with me, talk with me .. let me explain!

Every few months I get on an “I am going to eat better, I am going to eat organic, I am going to plant my own garden” kick.  This is all well and good until I walk outside and it’s 142 degrees with 110% humidity and I watch small bugs explode in mid-flight from the rays of the sun. No. Really. This happens.

Now the one thing that HAS stuck me with it comes to making healthier decisions is making my own Roasted Cashew Butter. Have you ever had real, homemade peanut butter?  Almond butter?  Homemade Cashew Butter??? You’re life is not complete if you haven’t.  Gone are the chemicals and preservatives but better yet, the Roasted Cashew Butter taste is out of this world!!!  I eat in on toast, on crackers, ON A SPOON… you will thank me for this, I promise!!

IS CASHEW BUTTER HEALTHIER THAN STORE BOUGHT PEANUT BUTTER?

Yes! All of the fat in cashew butter is heart-healthy unsaturated fat, which is excellent news. Cashew butter contains about half the sugar of peanut butter and when it is homemade, it contains no additives, making homemade Roasted Cashew Butter the ideal choice.

HOW DO YOU STORE CASHEW BUTTER?

You can store homemade cashew butter in the refrigerator for up to 3 months. Be sure to transfer your cashew butter to a jar or airtight container and store in the refrigerator.

HOW DO YOU MAKE ROASTED CASHEW BUTTER?

Easy! To make Roasted Cashew Butter, start by pouring your raw cashews into a skillet and roast over medium heat until you can just smell the roasty toasty goodness.  Do not let the nuts burn.. this is a party foul and you will have to start all over again.  Once your nuts are toasted, transfer them to a food processor or blender.  I like using my smaller processor opposed to the larger machine since I am making just a small batch of Roasted Cashew Butter.  If you are making this for the entire family at Christmas time, definitely break out the big boy.  Pour in your cashews and add in your oil, salt and honey.  Hit the button and let it go!!! It will be clumpy and crumbly but have patience.  Once it gets past that stage it will start to get creamy. Occasionally, scrape down the sides and start it up again.  It takes approximately 7 minutes or so, depending on your machine and what kind of consistency you are looking for. Once you are happy, check the seasonings and adjust accordingly.  When your Roasted Cashew Butter is where you want it, transfer it to an airtight container, let it cool and then store it in the refrigerator for up to three months.

Congratulations!! You just made your first batch of Roasted Cashew Butter .  You can do this with almonds, peanuts… the sky is the limit!!!! Did you taste it yet?  I know you did… It’s impossible to wait.  Amazing, isn’t it??? See?  I can use my powers for good … sometimes…

Ingredients

  • 2 1/2 cups raw cashews
  • 2 tsp honey
  • 2 tsp olive oil
  • 1 tsp salt

Instructions

  • Pour your cashews into a skillet and roast over medium heat for 1 - 2 minutes, stirring continuously until you can just smell them.
  • Once your nuts are toasted, transfer them to a food processor or blender. Pour in your cashews and add in your oil, salt and honey. Pulse your cashews until they are broken up and then set your food processor to blend.
  • Occasionally, scrape down the sides with a rubber spatula and start it up again. It takes approximately 10 -12 minutes or so, depending on your machine and what kind of consistency you are looking for.
  • Once your cashew butter has come together and is at the desired smoothness, check the seasonings and adjust accordingly. When your Roasted Cashew Butter is where you want it, transfer it to an airtight container, let it cool and then store it in the refrigerator for up to three months.

Notes

You can also make this Roasted Cashew Butter using store bought cashews that are already roasted and salted.  If that is what you are using, omit the first part of the instructions explaining how to roast the nuts.  Simply add your cashews to the food processor and follow the remaining instructions.  If your cashews are already salted, taste test them before adding the salt called for in the instructions.

    OK, I grew up with my mom making peanut butter – and, oddly, I don’t, *because* I can get natural peanut butter that is 100% peanuts (I can even watch it grind, so I know it is fresh.) And she even made almond butter, and I have done that a time or two.

    But I never even thought of cashew butter. That must be so… buttery… luxurious… I need to try this.

    1. Anne, this is the one that I make the most and have even given it as gifts before. I’ve made fresh peanut butter (yum!) and I have even tried to make pistachio butter (notice I said ‘TRIED’… I wont go into detail but lets just say it doesn’t come out as pretty a color as I had hoped it would.. lol)..but I haven’t made almond yet .. now you have me curious….. hmmm …. Thanks!!!
