Words cannot express how life changing it is to make your own peanut butter, let alone HOMEMADE CASHEW BUTTER!!! Walk with me, talk with me .. let me explain!
Every few months I get on an “I am going to eat better, I am going to eat organic, I am going to plant my own garden” kick. This is all well and good until I walk outside and it’s 142 degrees with 110% humidity and I watch small bugs explode in mid-flight from the rays of the sun.
No. Really. This happens.
I always start with the best of intentions and I even go so far as to become a regular patron at my local farmers market (again) and I am checking labels and eating a lot of asparagus and talking to people about the evils of Corporate America and the plight of the common farmer. Then as the weeks go by, I slowly start slipping back into my evil ways and before I know it (ding..dong) it’s time to start the whole process all over again. What can I say, I’m a perpetual work in progress.
Now the one thing that HAS stuck though my back and forth is making my own cashew butter. Have you ever had real, homemade peanut butter? Almond butter? Homemade Cashew Butter??? You’re life is not complete if you haven’t. Gone are the chemicals and preservatives but better yet, the taste is out of this world!!! I eat in on toast, on crackers, ON A SPOON… you will thank me for this, I promise!!
Pour your cashews into a skillet and roast over medium heat until you can just smell the roasty toasty goodness. Do not let the nuts burn.. this is a party foul and you will have to start all over again. Once your nuts are toasted, transfer them to a food processor or blender. I like using my smaller processor opposed to the larger machine since i am making just a small batch of cashew butter. If you are making this for the entire family at Christmas time, definitely break out the big boy. Pour in your cashews and add in your oil, salt and honey. Hit the button and let it go!!!
Then wait. And wait. And stare at the glop as it slows to a stop and then whirrllllll … there it goes again. Occasionally, scrape down the sides and start it up again. It takes approximately 7 minutes or so, depending on your machine and what kind of consistency you are looking for. Expect for it to take around 12 – 15 minutes all together to reach the right butter stage. Once you are happy, check the seasonings and adjust accordingly. When your cashew butter is where you want it, transfer it to an airtight container and move it to the refrigerator to cool.
Congratulations!! You just made your first batch of Homemade Cashew Butter. You can do this with almonds, peanuts… the sky is the limit!!!! Did you taste it yet? I know you did… It’s impossible to wait. Amazing, isn’t it??? See? I can use my powers for good … sometimes…

- 2 1/2 cups cashews , salted and lightly toasted
- 2 tsp honey
- 2 tsp olive oil
- 1 tsp salt
Pour your cashews into a skillet and roast over medium heat until you can just smell them
Once your nuts are toasted, transfer them to a food processor or blender.
Pour in your cashews and add in your oil, salt and honey.
Pulse your cashews until they are broken up and then set your food processor to blend.
Occasionally, scrape down the sides with a rubber spatula and start it up again.
It takes approximately 7 - 12 minutes or so, depending on your machine and what kind of consistency you are looking for.
Once your cashew butter has come together and is at the desired smoothness, check the seasonings and adjust accordingly. When your cashew butter is where you want it, transfer it to an airtight container and move it to the refrigerator to cool.
