Mmmm .. Chocolate Hazelnut Mousse… but more about that in a minute!
If there is one thing that is a necessary item for my day to even START, it’s a big steaming cup of coffee. Some people need a hot shower to wake up, some need a brisk walk around the block and some people (like THIS girl!) need that cup o’ joe to pry those eyes open and get those brain waves fired up… and we won’t even mention the positive sunshiny attitude! My cup of coffee in the morning is really almost a public service. Trust me on that!
Unfortunately, however, my love of coffee comes with a price and they are called ‘fat’ and ‘calories’. I used to stop at a coffee drive thru on my way to work and order my coffee with six creamers and six sugars. Can you believe that?? That’s like half my days calories right there. So over time and in the interest of eating and drinking healthier, I have removed the sugar from my coffee but I have not been able to break up with my creamer. It’s like any other bad relationship.. queue the 1990’s love ballads… sometimes it’s hard to say goodbye.

WOW! That’s all I can say about this dairy-free Silk Creamer. I usually use Silk Almond Milk in my morning smoothies so you cannot believe how happy I was when I found out they also now make creamer for my coffee. Are you serious? Coffee is my one weak point when it comes to changing my full fat ways and now Silk makes a dairy-free option?
I jumped my car and headed to the Walmart around the corner. I cannot tell you how convenient it is to shop in a store where you can find everything you need in one place. So many smaller stores do not carry everything you might need for a recipe causing you to have to go to two different grocery stores. How is that convenient and how does that save you time? It doesn’t and that’s why I shop at Walmart.
I walked straight back to the milk and creamer section of the store and there it was! I had my choice of Vanilla, Caramel or Hazelnut so I grabbed the Hazelnut and happily dropped it in my basket and set off to do the rest of my weekly shopping.
Now I will confess, the bakery is my favorite place to start and I usually walk around and drool looking over their pastries, cakes and sweets. My eyes fell on a container of chocolate mousse that had to have at least 7000 calories in it and it occurred to me that I could make mousse at home for a lot less guilt. Then I looked down at my dairy-free Silk Hazelnut Creamer and I will tell you, I about ran out of that store!!! Chocolate Hazelnut Mousse without the fat and calories?????? YES PLEASE!!

The first thing I did when I got home was brew a big pot of coffee. I admit, I am very picky when it comes to flavored creamers and often times find they are too sweet and too overpowering. But I had huge hopes for this new Silk Creamer and I was NOT disappointed. The flavor is creamy and tasty and perfect in every way!!
After I finished my second cup of coffee (maybe it was my third…), I started thinking about this recipe for Chocolate Hazelnut Mousse. This recipe is so easy to make and the Silk Hazelnut Creamer made all the difference in the world. With using just a few ingredients that you probably already have in your pantry, you can whip together the best Chocolate Hazelnut Mousse you can imagine.
I usually have a couple cans of coconut milk chilling in the refrigerator so I grabbed them and after opening the cans, spooned the thick cream from the top into a bowl and then reached for my sugar substitute. I added just three packets to the bowl and then added in my Unsweetened Dark Cocoa. Using my electric hand mixer, I whipped the ingredients together until smooth and creamy. Then I added in a pinch of salt, some vanilla and finally, the Silk Hazelnut Creamer. Once again, I fired up the mixer and whipped everything together. It came out perfect!!!! Thick and full of chocolate hazelnut flavor…. in all of 5 minutes!!!!
Tell me of another dessert that comes together that fast? Like most of us, my daily schedule is always planned down to the minute and jammed tight, but not today. I took time to sit outside and I put myself in Time-Out. No dogs, no hubby, no laundry… just me and my new favorite cup of coffee and a little bowl of happy, rich indulgence.

Chocolate Hazelnut Mousse
Ingredients
- 2 cans full fat coconut milk , refrigerated
- 3 1/2 tbl unsweetened dark powdered cocoa
- 3 packets Truvia
- 4 tbl Silk Hazelnut Creamer
- 1/4 tsp salt
- 1/4 tsp vanilla
- fat-free whipped topping (optional)
Instructions
- Open up the refrigerated coconut milk cans and spoon out the thick cream at the top into a bowl.
- Add in the cocoa and Truvia and using an electric hand mixer, beat until smooth and creamy
- Add in the salt, vanilla and Silk Hazelnut Creamer and beat until all is incorporated. Increase speed and whip for 1 minute
- Spoon or pipe mousse into a small bowl, top with a dollop of fat-free whipped topping and enjoy!!
I’m such a BIG FAN of Coconut Milk desserts and the addition of Hazelnut Creamer must have made the mousse AWESOME!!
Molly, I just started using coconut milk!! I love it! My next adventure is to see if I can use it as frosting .. like a thick moussey frosting on cupcakes. It looks like it would pipe out beautifully and considering I frost cupcakes like a 4 year old, I need all the help I can get. Haha!
I adore everything about this. I also HAVE to start my morning with coffee. I recently had to switch to decaf *sniff* but I still must go through the ritual. Hazelnut flavored creamers are always my first choice. It’s funny, because I went through the exact same thing with coffee. I used to load it up with cream and sugar, and I’ve slowly weaned myself down to no sugar and almond milk (most days). The mousse looks SO tasty!

Wow this looks incredible – I think the addition of the hazelnut flavour would make the chocolate mousse even better. Coconut Milk is a fairly recent phenomenon in the UK but happily becoming more popular.
