As we draw closer to Thanksgiving, I have to wonder if it is even legal to celebrate that holiday without serving some kind of pie? I’m pretty sure it’s not because I have never seen a Thanksgiving table without at least 3 different varieties present. And let’s be honest for a moment, shall we? That is always OK with us!!
Pecan pie has always been a bit of a mystery to me. Obviously, you can clearly identify the pecans in it but what exactly were those poor little nuts encased in?? What is that pie actual made of?? Then I decided to face the pie head on and make one. And then add chocolate to it…. Oh my! After making my first one I see that this is a pie made with love and deliciousness through and through!! Rich and sweet with an abundance of pecans and just a hint of bourbon… besides, any recipe that causes me to break out a bottle of bourbon early in the morning is a recipe that I will gladly consider my friend. Ha Ha
Chocolate Pecan Pie
You will need:
3 tbl butter, melted
3 eggs, beaten
3/4 cup brown sugar
2 tbl flour
1/4 tsp salt
1 tsp vanilla extract
3/4 cup dark corn syrup
2 tbl bourbon liquor
1 3/4 cups pecan halves
2/3 cup mini milk chocolate morsels
1 (9-inch) unbaked pie shell
Start by preheating your oven to 350 degrees F. In a mixing bowl, beat your eggs and then stir in your brown sugar, flour, vanilla extract, salt, corn syrup and bourbon until they are all combined. Add in your melted butter and stir. Add in your pecans and chocolate morsels and mix all together.
Look at all that yumminess swimming around in a pool of sugar and bourbon!!
Pour mixture into unbaked pie shell that has been sprinkled with a dusting of flour.
Place on a sheet tray and bake for 55-60 minutes. Remove from oven when done and let cool. Serve with a huge dollop of whipped cream and some extra pecans for garnish.
Yup, it’s really that quick and easy!! This pie is delicious and the chocolate gives the pie and additional richness that really stands out. Now go… make a new friend!!
