Hello.. hello.. hello..? Is this thing on? I have three words for you. Best. Cookie. Ever! And what I am yelling about when I say best cookie EVER are these Chunky Monkey Cookies.  Chunky Monkey Cookies are soft banana cookies bursting with dark chocolate chunks, tons of walnuts and because they are so freaking good… they are twice the size of your average sized cookie.  That’s cookie nirvana!!
It’s safe to say that just about everyone loves cookies. And it’s equally safe to assume that a lot of people love ice cream. There is no reason to argue or deny these facts. But what if you could take your favorite Chunky Monkey ice cream and transform it perfectly into a warm soft baked Chunky Monkey cookie? What do you have in your life at that point? I will tell you what you have, my friend, you have the ultimate Chunky Monkey Cookies Perfection!

It is not often that I will go to the store just for ice cream. But there are THOSE days that just you just need something sweet to cheer you up. Or maybe you had a really good day and you want to treat yourself. Or maybe you go to the grocery store and your favorite ice cream is BOGO. That is usually what happens to me. That is the evil ice cream swirling vortex of bad decisions and abandoned calories that always sucks me through. And when it does, I almost always get Chunky Monkey ice cream by Ben & Jerry.
So one day I was feeling a little some way about some thing and I decided to see if I could make a cookie that would rival my favorite ice cream. I set out to accomplish this earth-shattering feat and trust me, I succeeded! These Chunky Monkey Cookies are now everyone I knows favorite new cookie. My husband ate two dozen of these Chunky Monkey Cookies just by himself and has proclaimed it to be his new favorite cookie EVER.  He also threatened impending doom and violence when I tried to save him from himself and take away his Chunky Monkey Cookies zip-top bag and he’s the nice, quiet, calm ONE. I almost didn’t make it out with all of my fingers intact!
Plus, one of my coworkers demanded the Chunky Monkey Cookies recipe after just one bite and said this was the best cookie she had ever eaten. When you can bring the happiness to a co-worker, you know the Chunky Monkey Cookies are a hit!

WHAT DOES BEN & JERRY’S CHUNKY MONKEY HAVE IN IT?

DO I USE RIPE BANANAS TO MAKE CHUNKY MONKEY COOKIES?

Yes, you want to use ripe bananas to make Chunky Monkey Cookies.  Whereas you would use brown or over-ripe bananas to make banana bread (for example), it is not necessary to use older bananas for your Chunky Monkey Cookies.

HOW DO YOU MAKE CHUNKY MONKEY COOKIES?

Easy! To make your Chunky Monkey Cookies, preheat oven to 325 degrees and line a cookie sheet pan with parchment paper. Start by adding butter to a large mixing bowl and beat with an electric hand mixer until fluffy. Add sugar, egg, egg yolk, salt, brown sugar, sugar and vanilla to the bowl and mix util well combined. In a separate bowl, sift together the flour and baking soda and then incorporate slowly into the butter/sugar batter. Once everything is combined, fold in chocolate chunks, banana and walnuts until mixed. Using a 1/4 cup measuring scoop (yes, these are big!) drop large scoops of Chunky Monkey Cookies onto the cookie sheet, leaving 2 inches of space in-between each of the cookies. Bake Chunky Monkey Cookies for 20-22 minutes (they will still be very soft so be gentle!). Remove from oven and let cool on cookie sheet 1 minute before moving the cookies to a cooling rack.
Store in an airtight container with parchment paper separating the layers .. not a zip-top bag… these are super soft baked and my first batch all stuck together in a bag, even though they were completely cooled

Ingredients

  • 2 large bananas mashed
  • 11 ounces dark chocolate chunk morsels
  • 1 1/3 cups walnuts rough chopped
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 egg

  • 1/2 teaspoon salt
  • 3/4 cup butter softened
  • 1 cup brown sugar packed
  • 1/2 cup white sugar
  • 1 tablespoon vanilla
