Get ready for some Cilantro Lime Chicken Tacos!  If you are like me or just about any other person responsible for cooking dinner on a regular basis, you know that the word ‘chicken’ can get your mouth washed out with soap some nights.  Yup, it can be THAT bad of a word at times.  How many chicken dinner recipes do you have in your magic recipe box and how many get rotated and forced upon your family to enjoy.. again .. and .. again .. and .. again?  Me too!

This recipe is scrumidiliumpiousness rolled up into a tortilla (take THAT, Spellcheck!!). Seriously, Cilantro Lime Chicken Tacos are something healthy and fresh and it doesn’t take very long to prepare at all.  Mix together the marinade and get that pesky yard bird marinating while you are starting laundry and chasing the kids around or in my case, the dogs around, and by the time you are ready to make dinner.. you, the chicken and the kids / dogs are all on the same page.  You’re happy, the chicken is happy, the kids and creatures are happy and you go to bed that night knowing you fed your family a healthy meal that tasted amazing and these Cilantro Lime Chicken Tacos is one meal they will be asking for again and again.

HOW YOU DO YOU SERVE CILANTRO LIME CHICKEN TACOS?

Any way you like!! I have re-invented this Cilantro Lime Chicken Tacos recipe more times than I can count.  Hard taco shells, soft tortilla shells, no shells.  I have served this Cilantro Lime Chicken without the ‘taco’ part, just cut the chicken up and served it up in a bowl of rice with same Pineapple Jalapeno Salsa on top.  I have dressed up my Cilantro Lime Chicken Tacos with Easy Homemade Salsa, Cabbage Slaw and even Garlic Cilantro Aioli.

WHAT IF YOU DON’T LIKE CILANTRO?

No worries! If you are not a fan of cilantro .. and a lot of people aren’t .. you can still totally enjoy these Cilantro Lime Chicken Tacos.  The cilantro plays more of a last minute garnish to this marinade so leaving it out of the recipe will not effect the actual marinade or the chicken.  Just omit the cilantro garnish at the end.

HOW DO YOU MAKE CILANTRO LIME CHICKEN TACOS?

Easy!!! To make these Cilantro Lime Chicken Tacos, start by taking three chicken breasts and putting them into a large zip top bag. In a small bowl, combine all of the ingredients except the cilantro. Pour your mixture over your chicken breasts, squeeze out the excess air, seal your bag (very important!) and move your chicken around so all sides are coated in your marinade. Place in your refrigerator and let marinate for 1-2 hours.

When your Cilantro Lime Chicken has marinated for as long as you like, remove the chicken from the zip bag and cook as you prefer. You can grill these for 7-8 minutes on each side or bake them in the oven on 350 for 30 minutes. Heck, you can even throw these on your George Foreman grill for 8-10 minutes, which is my new favorite way of cooking these Cilantro Lime Chicken Tacos.

Once your chicken is cooked, slice on the bias and start piling on your toppings.

I use small flour wraps and after adding my chicken, top with your Easy Homemade Salsa, your Pineapple Jalapeno Salsa or maybe even Chipotle Corn Salsa (Copycat) .. some shredded Mexican cheese, sour cream, a squirt of extra lime and a sprinkling of fresh cilantro. The possibilities are endless for these Cilantro Lime Chicken Tacos. This method of preparing the chicken has become one of my favorites. The spicy taste is not overwhelming but it is not bland like a lot of marinades can be. This Cilantro Lime marinate would be great to do as kabobs or in a salad or just cooked off and served with veggies and a side dish. I promise, you will not be disappointed with this. Cilantro Lime Chicken Tacos just got kicked up to a whole new level.

Ingredients

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vegetable or olive oil
  • 1 lime juice and zest
  • 4 garlic cloves crushed
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes or powder
  • 1 tablespoon Sriracha .. or more if you want it spicier
  • 2 tablespoon cilantro for garnish
  • 3 chicken breasts
  • 9 tortillas small

Instructions

  • Take three chicken breasts and put them into a large zip top bag.
  • In a small bowl, combine of the ingredients except the cilantro.
  • Pour your mixture over your chicken breasts, squeeze out the excess air, seal your bag (very important!) and move your chicken around so all sides are coated in your marinade.
  • Place in your refrigerator and let marinate for 1-2 hours.
  • When your chicken has marinated for as long as you like, remove the chicken from the zip bag and cook as you prefer.
  • You can grill these for 7-8 minutes on each side or bake them in the oven on 350 for 30 minutes or even throw them in a cast iron pan over medium high heat for 3-4 minutes on each side and then finish in the oven at 350 degrees for about 20-25 minutes.
  • Once your chicken is cooked, slice on the bias, start piling on your toppings and garnish with cilantro.

    Cilantro and lime sounds like such a refreshing combination for summer. This would be a perfect dinner for us over the weekend. I love grilling season and we love tacos so .. definitely going to have to try this soon.

    We do have a lot of chicken recipes and then it seems that we go back to using the same one. Is it lazy or is it just lack of inspiration. I don’t know but this recipe sounds just the one I want to make. Summer is absolutely the time for cilantro and lime. I believe you have to try cilantro several times before you like it. That’s the way we were. We now love it.

    Oh yea! I am definitely happy when my kids are happy about the meal I served! This sounds like a nice one for wraps. The vegetarian version of this will for my kids lunchbox!

    I am Mexican so tacos are my most favorite meal. Your cilantro lime chicken tacos look incredible and like the facts your tacos are spicy as I like my tacos hot and with enough cilantro and onion!

    I adore cilantro but have some friends who have the gene that makes it taste like soap, so I usually substitute mint for them. But cilantro lime is one of my personal fave flavor combos, and I know I would LOVE this! Your photos make them look soooo yummy!

  9. This would make a great make-ahead freezer meal, if I just put all in the ziplock, freeze and then thaw the morning before I go to work- I love lime and cilantro! I am literally making this NOW! lol!

    1. OMG Yay!! I just made this recipe earlier this week.. it’s one of my husbands favorites. Perfect for a freezer meal and you can even double up the chicken amount with the marinade and then split them into two meals and then freeze them both. If you like it spicier, definitely add more sriracha .. I find I am pretty heavy handed with it these day. Let me know how it turns out 🙂
