We all know there are some days when you really need to step your game up. Now we all know we are all fabulous all day, every day. But occasions sneak up on all of us when you know that the usual bar of standards needs to be raised.

So, I am a tiny winy bit late in writing this post. I apologize but all I can say is that this year has completely gotten away from me. There have been so many things that have gone on in the past few months (both good and not so good) that This Girl is looking forward to 2017 in a Big Bang Come On In kind of way. But before we start popping the champagne and throwing around the confetti (don’t do that! .. don’t ever do that! .. that confetti will be around for the next 20 years… IT NEVER GOES AWAY AND YOU NEVER GET IT ALL!!), let’s take a jump back to this past Thanksgiving.
There are not really too many mornings where Big Scary Mikes gets a big fancy breakfast served up to him. Not that I am neglectful wife, it’s just that he usually works 6 days a week and leaves at 4:30am. And no matter how much I like him most days, believe me, there was nothing in our wedding vows about me getting up that early and feeding him.
Trust me, he has looked for it.
But then there are days when we are both home and no one is working and those are the days when I can treat him to something special. This past Thanksgiving was one of those days and instead of his favorite Breakfast Casserole, I thought I would surprise him with something sweet and festive… Cranberry Orange Cake.
Cake for breakfast??????????????? … um ……….. YES!!
This is a recipe that I have seen floating around the internet for years and have never had a chance to try. This recipe is my take on the famous Orange Juice Cake, except I made a few tweaks to it. And whereas cake is not normally a breakfast choice this Cranberry Orange Cake is perfect for either breakfast or dessert and that alone makes this recipe a winner in my house!
So how did the Cranberry Orange Cake go over as Mike’s Thanksgiving breakfast? Let’s see.. he took the entire plate with him in his man cave, he basically ate the entire thing by himself over the next 2 days (yes, it only lasted that long) and he has requested me to make it at least 4 times since then and it’s only the middle of December.
Those are good odds!

- Orange Cake
- 1 18.25 oz Orange Cake Mix
- 1 3.5 oz package vanilla pudding
- 4 eggs
- 1/2 cup vegetable or canola oil
- 1 cup orange juice (whatever your favorite kind is.. I like Simply Orange)
- 1 1/2 cup fresh or frozen cranberries , chopped .. mixed lightly with 1/2 tbl of flour
- Orange Juice
- 3/4 cup sugar
- 1/2 cup butter
- 3/4 cup orange juice
- Orange Glaze
- 1 cup powdered sugar
- 1-2 tbl fresh orange juice
- Zest of one orange
Preheat oven to 340 degrees and spray a bundt pan with non stick spray
In a large bowl, combine the cake mix, pudding mix, orange juice, oil, and eggs together with an electric mixer for 2 minutes.
Stir in the chopped cranberries.
Pour batter into bundt pan.
Bake for 55 minutes or until a knife inserted in the cake comes out clean.
In a small saucepan, combine the butter, sugar, and orange juice. Bring this to a boil and then remove from the stove.
While the cake is still warm, poke holes all over the top (exposed "bottom" of the cake) of the cake with a fork. Pour the orange juice mixture over cake (I used about 3/4 of the juice)
When the cake is completely saturated, let it rest for at least 15 minutes... you can also make this the night before you need it
Place a plate over the exposed bottom of the cake, holding both very tightly, flip your cake upside down onto the plate
In a small mixing bowl, whisk together the powdered sugar, orange juice and orange zest. Add in as much or as little orange juice as you need to bring the glaze to a consistency you like
Pour over top of Cranberry Orange Cake and enjoy
