Soup is probably one of the most underrated foods you will find. Yes, we all love soup on a cold day and if the soup choice is especially fetching we may even have it as an appetizer when we go out to dinner. But let’s be honest, do you ever really CRAVE soup? Like, nothing else will possibly hit the spot but SOUP?
Oh hell yes!
I love soup, I love stew…. I love anything remotely related to the soup family. Pour it into a bowl, serve it in a fresh made bread bowl (although I do have issues with wet bread), serve it hot or serve it cold, it is delicious any way you bring it to the table. Which makes me wonder why I don’t make more homemade soup? I’m really more of a “go out to dinner and have soup” kind of person, I guess. I have two or three tried-and-true favorites that I will make on a cold winter’s day like my Pasta e Fagioli, Springtime Vegetable Soup, and my Beer Cheese Baked Potato Soup…and let’s not forget my Easy Quick and Amazing Chicken and Dumplings, which may not be a soup but Oh My, is it good!!!!!
So why don’t I make more soup? It’s easy to make, you control the quality of ingredients and sodium level and we all know that soup is amazing two and three days in a row. I guess that is why the last time it was cold here in Florida, for that one whole 24-hour day, I immediately broke out my soup pot. And that is when I had that personal realization moment when it occurred to me that I could make any one of my usual soups or I could try my hand at something new… because HEY… guess what?… it’s what food bloggers do.
The one soup I have always wanted to try but never seemed to be able to commit to the appetizer choice was tortilla soup. How can this be bad? You have all the best Mexican flavors it’s just all in soup form. There’s no way this is going to be bad, I thought. Boy was I right! This Easy Chicken Tortilla Soup turned out amazing! There was barely enough to serve as leftovers the second day, that’s how much of this Easy Chicken Tortilla Soup got eaten on it’s first pass. This soup is spicy and filling and so easy to customize to your taste. Like avocados? Add them in. Don’t like corn? Go ahead and leave that out. You want to top your soup with sour cream or tortilla strips or cheese? Whatever twirls your skirt up, go for it!

- 2 tbl butter
- 1 medium onion , diced
- 2 jalapeno peppers , diced with ribs and seeds removed
- 6 cloves garlic , diced
- 1 tbl chili powder
- 1 tbl cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 32 oz chicken stock
- 2 chicken bouillon cubes
- 30 oz petite diced tomatoes
- 15 oz chili flavored black beans (or regular black beans if unable to find chili flavored)
- 15 oz corn
- 2 limes
- 20 oz shredded chicken (Tyson frozen bag) or 3 cooked chicken breasts, shredded
- 1/2 cup cilantro , diced
- Queso Fresco cheese.. sour cream.. tortilla chips.. avocado.. for garnishing
In a large soup pot, melt 2 tbl butter and heat over medium-high heat
Add in the onion, jalapenos (ribs and seeds removed), and cook for 2-3 minutes, stirring as needed
Add the garlic and stir for another minute
Add in the chicken broth, bouillon cubes, chili black beans, undrained tomatoes, corn, shredded chicken, lime juice, and all spices and bring to a boil.
Reduce heat to medium and let soup simmer at a low boil for 10 minutes.
Remove the soup from the heat.
Stir in the cilantro and serve with your favorite garnishes
