Oh let’s be honest with ourselves, shall we? New Years has come and gone and for most of us those pesky resolutions have too. There is just something about January 1st that compels us to strike the slate clean and start over with our best intentions once again. Even if you are a person who never
admits makes resolutions, there is always the optimism of a better YOU in the new year. It’s human nature to try to evolve, to better ourselves and like all things, you need a starting point if you are ever to move towards the finish line. There’s no shame in this, in fact we should all be rewarded for picking ourselves up off the floor after our embarrassing display of holiday eating and even attempting to squeeze into our workout gear. Where did that extra tummy roll come from??? Oh that? Probably the plate full of cookies you blamed the dog for eating when it was you secretly staying up late and binging on Netflix and Peanut Butter Blossoms. Those jeans aren’t scootching up past your bottom? Yup… too many glasses of egg nog and plates of holiday party appetizers. You do realize appetizer plates are small for a reason, right? Sigh ….. the shame!!
So here comes January and we shove away all evidence of the entire MONTH of December and with that we are one good juice cleanse away from absolution. All is forgiven, all is forgotten. Then comes reality aka Real Life. Juicing is expensive.. and messy… and time consuming .. and expensive. Diets leave you starving and hangry all the time and by the time dinner time rolls through you are so famished your children even stay away from you in the hope you will not eat THEM. Chicken.. chicken.. chicken…. even on a good day, it’s hard to love that yummy little yard bird if you have eaten nothing but poultry for 2 weeks straight. What is Christmas cookie addict to do?????
Live your life, that’s what you do. Accept that pizza night is not the enemy and it’s ok to make chicken alfredo every once in a while. Moderation is key to any lifestyle and the pressure we put on ourselves to be perfect come January 1st will tank those good intentions faster than you can eat a cupcake!!

This salad is packed with so much crunchy, healthy goodness and is so complex and delicious, you will almost forget you are scarfing down ‘diet’ food. It’s just that freaking good!! I mean, like WOW, NO I AM NOT SHARING, I WILL STAB YOU WITH MY FORK IF YOU GET TOO CLOSE TO MY PLATE good.
Now, keep in mind there is a lot going into this salad bowl and if you are not a fan of this or that, by all means make this salad your own. Believe me, unless you smother it in fried buffalo chicken wings (…mmmm, chicken wings…. ) there is no way you can do wrong with adding this salad into your weekly routine. I promise it makes living the good life all that much better.

- 4 cups purple kale , chopped
- 2 cups chopped greens
- 2 - 3 slices purple cabbage
- 1 15 oz can sweet corn , drained
- 1 15 oz can black beans , drained and rinsed
- 1 15 oz can chick peas , drained and rinsed
- 8 oz crumbled goat cheese
- 8 oz dried cranberries
- 8 oz pecans , chopped
- 1/2 cooked quinoa (per manufacturers instructions)
In a large bowl, mix all ingredients and top with your favorite citrus vinigrette dressing
