There are some frosted treats that will immediately take you back to your childhood, no matter what your age. Frosted Rice Krispie Treats is that magical transporter through space and time for me.  And it’s impossible to say NO to because you can be on the strictest of eating regimens or just finished an eight course meal and when someones kid runs by with a hopped up square of frosted no bake dessert goodness in his dirty little hand… well, lets just all agree that accidents happen and children are clumsy and who knows how that frosted rice krispie treat ended up in your mouth.

Life is strange sometimes.

Of course we are not advocating tripping small humans for their chunks of marshmallowy goodness.  What is going to be given to you is the best recipe for Frosted Rice Krispie Treats around so that you can make your own pan and stop being a menace to society.  Really.

As we all know, the original rice krispie treats recipe is amazing and on the back of every box of rice cereal you pick up.  What if I told you there was a better way?  A new, improved, knock you into next week way? A Frosted Rice Krispie Treats way?

DO FROSTED RICE KRISPIE TREATS NEED TO BE REFRIGERATED?

Rice Krispie Treats can be stored at room temperature in an air tight containment or a zip top bag for 1 to 2 days with no problems… like they will last that long!!  Frosted Rice Krispie Treats can also be kept at room temperature for 1 to 2 days in an airtight container if you are using homemade buttercream frosting because the sugar stabilizes the milk and the Frosted Rice Krispie Treats are still considered safe to eat. If you are using a store bought tub of icing, you will want to refrigerate your Frosted Rice Krispie Treats.

WHY DO MY FROSTED RICE KRISPIE TREATS GET HARD?

Your Frosted Rice Krispie Treats will come out hard if you melt your butter and marshmallows over too high heat. It might take a couple extra minutes but melt the butter and marshmallows over low heat. Your Frosted Rice Krispie Treats will be soft and chewy!!

HOW DO YOU MAKE FROSTED RICE KRISPIE TREATS?

Easy! To make Frosted Rice Krispie Treats start by melting butter over low heat in a large saucepan. Once butter is melted, add in marshmallows, vanilla, honey and salt and stir constantly until marshmallows are completely melted. In a VERY large bowl, pour in rice cereal and then pour melted marshmallow mixture on top of the cereal and immediately mix until all it is all well combined and the cereal is completely coated. Completely cover bottom / sides of either a 9×9 pan (extra thick) or a 13×9 pan pan with parchment paper and then spray the UP side of the parchment paper with a light coated of non-stick spray. Pour cereal into the pan and then spray your hand with that same non-stick spray. Using your hand as a spatula, press the rice krispie treats down until even. Let cool on the counter or place in the refrigerator for 1 hour. To make the Buttercream Frosting, in a large bowl and using an electric mixer, whip your butter until creamy. Add in your powdered sugar, vanilla, cream and salt. Mix to combine. Spread frosting on top once completely cool and then add on the sprinkles. Serve immediately

Ingredients

Rice Krispie Treats

  • 3 tablespoons butter
  • 10 oz bag of mini-marshmallows
  • 1/2 teaspoon salt
  • 1 tablespoon honey
  • 1 1 /2 teaspoon vanilla extract
  • 6 cups box of rice krispie cereal

Buttercream Frosting

  • Sprinkles optional but are too fabulous not to add
  • 1 cup butter, softened
  • 5 - 6 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 - 3 tablespoons milk or cream
  • 1/2 teaspoon salt

Instructions

  • Start by melting butter over low heat in a large saucepan. Once butter is melted, add in marshmallows, vanilla, honey and salt and stir constantly until marshmallows are completely melted.
  • In a VERY large bowl, pour in rice cereal and then pour melted marshmallows on top of the cereal and immediately mix until all is well combined and the cereal is completely coated

Notes

You may also use a tub of store bought cake frosting in place of the homemade buttercream frosting.

    These are awesome!! Your buttercream frosting is amazing as well so I’ll definitely keep this as my go-to for cakes going forward! I actually grabbed the frosted Rice Krispie cereal (Not Rice Krispie Treat Cereal- bigger chunks and those must be broken up) and used those instead of the regular Rice Krispies! (That’s all they had in the store and with COVID-19, psh I’m not chancing it) Plus, I added extra marshmallow (Added about 1/2 cup – 1 cup as we were melting down) because my family loves them extra gooey! Delicious and if I might add, the sprinkles are a MUST! 🙂 Thanks for sharing this, love to know if you have more fabulous ideas! XoXo AMC

  2. I am about to make these but worried that the frosting is going to make them a challenge to cut into squares . . . I was planning on using a tub of frosting as well – it can be so creamy and soft.
    Do you have any tips? It’s for a bday party so I want them to look nice, if possible!
    I was thinking I’d pop the whole pan of frosted rice krsipies out of the pan and THEN cut on a cutting board. I am thinking that trying to cut them frosted and in the pan might not make for clean cuts. My other thought would be to pop the whole thing into the freezer for a bit so the frosting hardens up?

    1. Hi Christen 🙂 you definitely can’t stack them up like you normally would with rice krispie treats so I always treat them like i would a sheet cake. The frosting is fine as long as you don’t try to double them up in a container, like if you were going to take them to visit somebody or to work. As long as you store them flat you should have no problem. I usually leave them in the pan originally make them in and serve them and store them out of that. If you are worried about the squares looking messy with the frosting, wipe your knife off on a paper towel each time in between. You should be ok after that.

    1. Priya, I have to be honest … the hot pink frosting is my favorite part!! I like homemade frosting better myself but I honestly didn’t think I could reproduce that great color 🙂

    1. This recipe definitely took me back to my childhood 🙂 … and I think all nephews love these because mine are 28 years old and I still had to fork them over… haha
