Is there anything more refreshing than a fruit salad? As the weather starts to warm up and there are more and more activities being done outside, there is nothing more perfect than a big bowl of natural sweetness to recharge your batteries. Soon, our calendars will be busy with picnics, weekend parties and the like and instead of bringing the usual fare, why not treat everyone to a dish that’s sweet and tart, cool and refreshing?
July 4th is rapidly approaching and here in Florida, it is hot outside! I don’t mean slightly warm and moderately uncomfortable .. I mean standing on the surface of the sun wouldn’t be as draining as summer in Florida is. It makes pigging out at BBQs difficult, it’s too hot to eat and too hot to stand outside hovering over a food table. But bring out a huge bowl of sliced fruit straight from the refrigerator?… now we are talking!
July 4th is a busy day for gatherings so I wanted my fruit salad to embody the day. Blueberries, strawberries and apples… red, white and blue. Then my mind took it a bit further and next thing I knew, I was on the hunt for a tiny, little star cookie cutter. Once found, the perfect fruit salad was born.
This one is a no brainer but there is a little surprise at the end, so pay attention.
In a large bowl, combine the blueberries and sliced strawberries.
Since I am preparing this for the 4th of July (would be awesome for Memorial Day celebrations, as well), I wanted to add another layer to the red, white and blue theme I have going. Peel, core and slice two apples about 1/4 inch thick. Using a small star cut out, make star shaped out of the apple slices.
Squeeze the juice of both limes and pour the honey over the fruit and stir well to combine.
The lime juice will help your apple stars from turning brown. Move the bowl the refrigerator and chill until serving.
This fruit salad is perfect for any occasion, whether it be a party, picnic or just sitting at home on your couch.
