When I was a little girl, I hated all vegetables of the green variety. Fast forward (insert fake age here) years later and while I am much better with my openness to food choices, I am still on the fence when it comes to many vegetables. That also included brussels sprouts .. until I made this Crispy Brussels Sprouts with Bacon recipe.  Because let’s be honest, you mix ANYTHING with bacon and garlic and I am IN!!!!

Now, keep in mind, before I started making these Crispy Brussels Sprouts with Bacon, I had never tried a brussels sprout IN MY ENTIRE LIFE but I just knew I was not going to like them. However, my husband loves brussels sprouts so me being “The Good Wife” started occasionally making them for him. First thing, the smell is atrocious! But they were cute though. Brussels sprouts are just simply the cutest vegetable that grows. They’re small and round and look like little mini cabbages and they really are adorable.

Then I tried one of his brussels sprouts. And I became confused because I didn’t know if I liked it … but I didn’t HATE it. Then I tried another one and maybe I tried two or three more after that. Talk about you you 360! Brussels sprouts have now become my very favorite vegetable in the whole wide world and these Crispy Brussels Sprouts with Bacon now get made at least twice a week.. and the hubby has to fight me for them!!

ARE BRUSSELS SPROUTS LITTLE BABY CABBAGES?

Not exactly … Brussels sprouts only LOOK like baby cabbages. They are not baby cabbages but they are part of the same family. Cabbages grows out of the ground whereas brussels sprouts are buds that grow along the length of a thick, fibrous stalk.

HOW DO I PREPARE BRUSSELS SPROUTS?

Start by washing and patting dry your brussels sprouts.  Then, using a sharp kitchen knife, lay your brussels sprout on it’s side and chop of the bottom stalk.  Then rotate your brussels sprouts upright and chop right down the middle.  You will have a few outer layer leaves fall off, that is ok.  Now your brussels sprouts are ready to be seasoned and cooked.

HOW DO I MAKE CRISPY BRUSSELS SPROUTS WITH BACON?

Easy! To make your Crispy Brussels Sprouts with Bacon, start by preheating oven to 450 degrees and line a baking sheet with parchment paper. Prepare brussels sprouts by cutting off hard ends and rinsing in water. Cut brussels sprouts in half and add to a large mixing bowl. Drizzle olive oil over brussels sprouts and lightly salt and pepper them. Pour them out onto prepared baking sheet and spread out into a single layer. Bake for 15 minutes. While brussels sprouts are baking, add cut up bacon pieces to a large skillet and cook over medium high heat until crispy. Remove bacon pieces from bacon fat with a slotted spoon and set aside. When brussels sprouts are done cooking, add butter and minced minced garlic to bacon fat and cook for one minute. Add brussels sprouts to pan and stir to coat. Season lightly with more salt and pepper. Move Crispy Brussels Sprouts with Bacon to serving dish and serve immediately.

Ingredients

  • 32 oz brussel sprouts halved
  • 4 slices bacon diced
  • 1 tbl butter
  • 4 cloves garlic minced
  • 2 tbl olive oil
  • salt and pepper to taste

Instructions

  • Start by preheating oven to 450 degrees and line a baking sheet with parchment paper
  • Prepare brussel sprouts by cutting off hard ends and rinsing in water.  Cut brussel sprouts in half and add to a large mixing bowl

  • Bake for 15 minutes. While brussel sprouts are baking, add cut up bacon pieces to a large skillet and cook over medium high heat until crispy.  Remove bacon pieces from bacon fat with a slotted spoon and set aside
  • When brussel sprouts are done cooking, add butter and minced minced garlic to bacon fat and cook for one minute.  Add brussel sprouts to pan and stir to coat. Cook for about 5 minutes and season lightly with more salt and pepper
  • Move to serving dish and serve immediately
