When I was a little girl, I hated all vegetables of the variety. I liked carrots, potatoes and corn and anything that fell outside of those three were a great big NOPE and completely off-limits! I didn’t want them, I didn’t try them, I didn’t like them, I didn’t want them. Fast forward (insert fake age here) years later and while I am much better with my openness to food choices, I am still on the fence when it comes to many vegetables.. brussel sprouts being one of them.
Now, keep in mind, I had never tried a brussel sprout IN MY ENTIRE LIFE but I just knew I was not going to like them so there was really no point in moving forward in that relationship.

My husband however loves brussel sprouts so Me being “The Good Wife” started occasionally making them for him. First thing, the smell is atrocious! This was obviously more evidence that I was going to hate those little green balls of horribleness.
They were cute though. Brussel sprouts are just simply the cutest vegetable that grows. They’re small and round and look like little mini cabbages, they really are adorable. But obviously they are the devil and I was never going to participate in any kind of relationship with those little things.
Then I tried one. And I became confused because I didn’t hate it as I thought I would. I didn’t know if I liked it … but I didn’t HATE it. Then I tried another one and maybe I tried two or three more after that. Then came my husband’s obsession with outdoor grilling and now they get grilled and served up at least once a week and it’s gotten to the point where I almost have to fight the big guy for them. I love them!

Now usually I do my brussel sprouts with olive oil with a dash of salt and pepper and now that we grill them them all the time, Mike might even get a little crazy and squirt them with a little bit of lemon juice from time to time but generally, we keep them pretty basic. But sometimes you need to break out the fancy and for this being my fancy brussel sprout recipe, I broke out the bacon.

- 32 oz brussel sprouts halved
- 4 slices bacon diced
- 1 tbl butter
- 4 cloves garlic minced
- 2 tbl olive oil
- salt and pepper to taste
Start by preheating oven to 450 degrees and line a baking sheet with parchment paper
Prepare brussel sprouts by cutting off hard ends and rinsing in water. Cut brussel sprouts in half and add to a large mixing bowl
Drizzle olive oil over brussel sprouts and lightly salt and pepper them. Pour them out onto prepared baking sheet and spread out into a single layer.
Bake for 15 minutes. While brussel sprouts are baking, add cut up bacon pieces to a large skillet and cook over medium high heat until crispy. Remove bacon pieces from bacon fat with a slotted spoon and set aside
When brussel sprouts are done cooking, add butter and minced minced garlic to bacon fat and cook for one minute. Add brussel sprouts to pan and stir to coat. Season lightly with more salt and pepper
Move to serving dish and serve immediately
