Yea! It’s almost same Patrick’s Day and that makes this Irish girl very happy. As I’ve mentioned in my Mint Chocolate Cheesecake post and my Irish Creme Chocolate Cupcake post, St. Patrick’s Day is my favorite holiday second only to Halloween. To this girl, this over the top holiday represents family, fun and good times. Some of my best memories have been celebrating this green and gold holiday with friends and family and most often, a belligerent looking bar tab. Most of the time I drag my husband along with me and I usually embarrass him at some point in the evening but it’s a family tradition and one that neither one of us would ever change.

St. Patrick’s Day isn’t just about green and gold, drinking green beer and heaping bowls of Bangers and Mash, it’s about putting a bit of Irish celebration into everything you do, even if it’s just for one day. This year, I thought I would write a new dish for St. Pat’s that was way out of my comfort zone but this Guinness Irish Macaroni and Cheese has now become my new favorite dish and I have to say, I’m really thinking you will enjoy this too.
Guinness Irish Macaroni and Cheese is a creamy, cheesy dish that perfectly combines the richness of Guinness and the sharpness of delicious Irish cheeses you can easily find in your local grocery store. The beer and cheese complement each other perfectly and I have to confess, this is my new go-to macaroni and cheese recipe, regardless if it is St. Patrick’s Day or not.
Let’s be honest, it could just be the third Tuesday in the month and this recipe is still going to make me happy.
Macaroni and cheese is something that gets made frequently in this house. It may not be the most diet friendly dish but OMG does it cure all of the evils of the world. Had a bad day? Mac n cheese will help you. Stressed out from life in general? Macaroni and cheese will help you. Heartbroken, sad, unsure of life’s direction? Macaroni and cheese will tak care of that too. As I mentioned in my Guinness Irish Stew, I have almost never cooked with Guinness before so I was a little bit nervous. There is nothing more heartbreaking than making an amazing pan of macaroni and cheese only to find that it somehow is less than perfection! No worries, Guinness is the perfect flavor to add into your favorite recipe. Even if you are not a big Guinness drinker, it plays off gorgeous against the sharp Irish cheese and this Guinness Irish Macaroni and Cheese is really an amazing dish. So whether it is St. Patrick’s Day you are celebrating or just the third Tuesday of the month, give this recipe a try.

- Cheese Sauce
- 2 tbl butter
- 2 tbl flour
- 1 1/2 cups whole milk
- 2/3 cup Guinness Draught
- 1/2 cup heavy cream
- 14 oz sharp Irish Cheddar Cheese , shredded and divided (I use Kerrygold)
- 1/2 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 8 oz macaroni pasta (I used corkscrews)
- Breadcrumb topping
- 1 cup Panko breadcrumbs
- 2 tbl butter
- Parsley if you want to make it fancy 🙂
Preheat your oven to 350 degrees and bring a large pot of salted water to boil.
Once boiling, add in the pasta and cook for 3 minutes. Drain and set the pasta aside.
In a large saucepan over medium high heat, add in 2 tablespoons of butter and once melted, add in flour, whisking constantly, cook for 1 minute.
Pour in your milk, cream and Guinness and while continuing to whisk, bring to a low boil.
Add in your seasonings and continue to stir.
Remove from the heat and whisk in 3/4 of your Irish cheddar cheese.
Whisk to combine and once all the cheese is melted, check for seasoning and flavor.
While you are preparing the sauce, add 2 tbl butter to a skillet over medium heat and once melted, add Panko breadcrumbs. Stir to combine and lightly toast. Remove from heat when they are lightly browned.
Combine the pasta and the cheese sauce and pour into a 9 x 9 baking pan.
Sprinkle with the remaining cheese and buttered breadcrumbs and bake uncovered for 25 minutes.
Remove from oven and let set for 5 minutes before serving.
