Yea! It’s almost same Patrick’s Day and that makes this Irish girl very happy. As I’ve mentioned in my Mint Chocolate Cheesecake post and my Irish Creme Chocolate Cupcake post, St. Patrick’s Day is my favorite holiday second only to Halloween. To this girl, this over the top holiday represents family, fun and good times. Some of my best memories have been celebrating this green and gold holiday with friends and family and most often, a belligerent looking bar tab. Most of the time I drag my husband along with me and I usually embarrass him at some point in the evening but it’s a family tradition and one that neither one of us would ever change.

St. Patrick’s Day isn’t just about green and gold, drinking green beer and heaping bowls of Bangers and Mash, it’s about putting a bit of Irish celebration into everything you do, even if it’s just for one day. This year, I thought I would write a new dish for St. Pat’s that was way out of my comfort zone but this Guinness Mac ‘n Cheese has now become my new favorite dish and I have to say, I’m really thinking you will enjoy this too.

As I mentioned in my Guinness Irish Stew, I have almost never cooked with Guinness before so I was a little bit nervous. There is nothing more heartbreaking than making an amazing pan of macaroni and cheese only to find that it somehow is less than perfection!
