Now, we all know that I am not a ‘Grilling Machine’… I am still too scared to fire up that bad boy (although I am getting closer to that day). But even though I am not, many (brave) people out there are so this recipe gives you that option, as well.
This is one of those recipes that I have no idea where I got it, but I am thankful everyday that it exists in my house. There is nothing worse than flavorless chicken. For as much chicken as we all eat in our quest to look better and feel better, no one has time for boring yard bird. This recipe is a quick put together, just a 30 minute marinade and you have a chicken breast that is exploding with fresh, springtime flavor. Just think of the time you will save yourself if you made a double batch and then popped the extra into the freezer when they were done cooking? Perfect for a quick dinner or to use on salads or as a mid-day snack.

Lemon Basil Chicken
Start by cleaning and trimming your chicken breasts and then put them into a large food storage bag. Set aside.
In a small food processor, add in the olive oil, lemon juice, lemon zest, salt and pepper, garlic and onion powders and the basil.
Whirl everthing until it comes together and you have a nice thin marinade.
Pour your marinade into the food storage bag, push out the excess air and seal tightly. Using your hands, massage the bag and move the chicken around inside so that all sides are coated in the marinade.
Set in your refrigerator for 30 minutes.
After 30 minutes, remove the bag from the refrigerator and the chicken from the bag.
Bake for 25 -30 minutes in the oven at 350 degrees.. or cook it on your screaming hot grill pan for 3 minutes each side and then cook it in your oven at 350 degrees for 20 minutes… or fire up your grill and grill them for 7-8 minutes each side or until they are cooked through.
Let rest 10 minutes before serving
