Are you a person who could eat potatoes in some form or another literally every day of their life?
That is 100% an accurate description of me.
Mashed potatoes, boiled potatoes, sauteed potatoes, potato casserole, hash browns, baked potato, loaded potato skins, etc, etc, etc,. I don’t care what you do to them, I don’t care what you put in them, how you serve them or how you make them, potatoes have got to be in my top TWO favorite food groups.
And if potatoes are not an official food group, they should be!
So you can imagine what the first thing is I dig into with every meal potatoes are served with. Yes, potatoes! I can order a steak and a loaded baked potato with a salad and some other miscellaneous side and I will eat 3/4 of that loaded baked potato before I even touch my perfectly cooked steak that’s sitting on the same plate as it slowly and sadly moves towards room temperature / cold. If I go to a fast food drive-thru and I order a burger and fries and a coke the very first thing that gets demolished is half a container of french fries before I even unwrap that cheeseburger. No matter what it is being served, understand that potato selection is getting killed first.
Now, you can understand my happiness when I wrote this recipe for Loaded Mashed Potato Casserole. Not only is it an entire 9×13 baking pan filled with mashed potatoes but those creamy fluffy pillows of potatoey goodness are then completely smothered in copious amounts of cheese and bacon…. maybe even some chives for color…
This Loaded Mashed Potato Casserole is super easy to make and is great as a side dish to any meal. Simply cut up and boil your potatoes, mash or whip the heck out of them ..your own personal preference.. my family likes their potatoes a little bit chunky so I can’t have them perfectly whipped…, transfer them to a baking pan and cover them with cheese and bacon, pop that in the oven, wait a few minutes and what you are rewarded with is the most amazing side dish to treat your family and friends with.
That’s if you decide to share, which is encouraged but not actually required.

- 4 lbs russet potatoes
- 8 tbl butter
- 1 medium onion diced
- 1 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp pepper white, preferred
- 1/2 cup cream
- 1/4 cup Parmesan cheese grated
- 4 oz cream cheese
- 3/4 cup sour cream
- 2 1/2 cup sharp cheddar cheese divided
- 6 slices bacon crispy
- chives for garnish
Preheat oven 350 degrees and lightly spray 9x13 pan with non-stick spray and set aside.
Wash potatoes, peel and cut into medium sized same size chunks. Add to large pot of salted water and bring to a boil.
While potatoes are boiling, melt butter in a small saucepan over medium high heat. Add diced onion and cook for 4-5 minutes. Add garlic powder and stir to combine. Remove from heat and set aside.
Let potatoes low boil for approximately 10 -15 minutes or until they are fork tender. Drain and return to pot.
Add in cream cheese, Parmesan cheese, butter/onion mixture, salt, pepper, cream, sour cream and 1 1/2 cup of cheddar cheese to potatoes. Mash potatoes or whip them with an electric beater (depending on your preference) and then transfer potatoes to the 9x13 pan.
Cover potatoes with remaining cheddar cheese and bacon. Bake for 15 minutes or until cheese is melted.
Remove from oven and garnish with chives. Serve immediately. Cover and refrigerate any leftovers.
