Meal Prep Breakfast Sandwiches are the perfect make-ahead breakfast sandwiches you have been waiting for! Made with baked eggs, bacon, sausage or Canadian bacon, topped with cheese and served up on a toasted English Muffin, these freeze beautifully so all you have to do is grab and go!

If there is one thing that I fail at on almost a daily basis, it is breakfast. Let me tell you a little story about why Meal Prep Breakfast Sandwiches are necessary.

Every morning the clock is set to go off 15 minutes early so that I have time to break out the Ninja and whirl up an amazing healthy smoothie.  

Every morning, the Snooze button gets violently assaulted… repeatedly and continuously.

Instead, I start my morning with an XL Dunkin Donuts coffee (extra cream, thanks!) and a cheese stick. Does anyone else do this? What is wrong with me?

So, even though I am very happy with my gallon of creamer and coffee and my stick o’ cheese, even I can recognize that I need to improve in this area.

WE NEED A BETTER PLAN, STAN

Breakfast on the run that doesn’t taste like cardboard is truly one of life’s more difficult challenges … um, hello… obviously.

I realized that instead of sitting in a drive-thru line for 20 minutes every morning or skipping breakfast all together, I could just make my own Meal Prep Breakfast Sandwiches. Wrap those babies up, freeze them and they would be ready to grab anytime I need them.

One thing I do enjoy doing is cooking breakfast on Saturday mornings. Unfortunately, Mike is usually working so I would simply be cooking for myself and let’s be honest, the dish duty just isn’t worth it.

But by making these easy breakfast sandwiches ahead of time, wrapping them individually and freezing them, these amazing fast food knock off breakfast sandwich are the easiest way to get a hot breakfast without having to stop at a fast food drive thru to get one.

Trust me, the people at McD’s have seen enough of my purple leopard yoga pants and my above average messy bun.

  • Take 1/2 hour Sunday morning and meal prep these sandwiches. Freeze them and you have breakfast on the go all week already waiting for you.

To make these easy Meal Prep Freezer Sandwiches, you will need:

  • English muffins
  • Eggs
  • Water
  • Salt, pepper and onion powder
  • Dried or fresh parsley
  • Canadian bacon, sausage patties or slices of bacon (dealers choice)
  • Cheddar or American cheese

HOW TO MAKE MEAL PREP BREAKFAST SANDWICHES

Start by preheating your oven to 375 degrees and spraying a 9 x 13 baking pan with non-stick spray.  In a large mixing bowl, whisk together the eggs, water, salt, pepper, onion powder and parsley.

Pour you egg mixture into your prepared baking tray.

Lay out your meat choice (bacon, sausage or Canadian bacon) on a non-stick baking sheet and move both the eggs and the meat to your oven and cook for 20-25 minutes.

Remove both from the oven and gently tip the eggs out the baking pan and onto your cutting surface while moving the breakfast meat to a plate and set aside.

Using a round cookie cutter, biscuit cutter or upside down drinking glass that’s the same size as your English muffins, cut out 6 circles from your sheet of eggs.

Increase the oven temperature to Broil and move the oven rack up right underneath the broiler.

Separate your English muffins and lay all pieces right side up on a baking sheet or directly on the oven rack.

Slide the English muffins under the broiler and let them toast for 1-2 minutes. Keep a close eye.. they burn quick!

Once your English muffins are toasted, start building your sandwiches. Add egg, meat, cheese depending on your personal tastes. Serve immediately.

To freeze, let the sandwiches cool completely before wrapping each individually in plastic wrap and then load them all up into a large zip top freezer bag before moving them to the freezer.

Freeze your breakfast sandwiches up to one month.

To reheat, simply unwrap the frozen sandwich, wrap in a paper towel and microwave for 1-2 minutes. You can also do what I do and remove the English muffin and pop it in the toaster.

PRO TIPS FOR THE PREFECT BREAKFAST

  • You eggs will come out of the oven super poofy.. give them a minute to rest and they will be fine.
  • Customize your breakfast on the go the way YOU like them. Perfect way to keep everyone in your household happy.
  • Laying the English muffins out on a huge pan and broiling them all off at once is a life saver. I say this because THIS girl still has a two opening toaster. WHAT???
  • Looking for a healthier step up? Use multi-grain English muffins, add veggies to your eggs or even substitute the whole eggs for just using egg whites or Egg Beaters.  Keep in mind, you will need to increase the egg count if you are using the egg white substitute.
  • Feel free to use turkey bacon, turkey sausage or sliced ham as your meat choice, as well.
  • Be sure to label your wrapped sandwiches if you have a variety made so you can easily pick out what you are looking for.
  • To reheat, simply unwrap the frozen sandwich, wrap in a paper towel and microwave for 1-2 minutes. You can also do what I do and remove the English muffin and pop it in the toaster.
  • These are also a great go-to easy breakfast idea to feed a crowd when you know you will have a house full of people… kid sleepovers, holidays when the whole family is over, etc…

Ingredients

  • 8 eggs beaten
  • 1/4 cup water
  • 1/2 teaspoon salt, seasoning salt or Cajun seasoning salt
  • 2 tablespoons dried or fresh parsley
  • 1/4 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 6 slices thick cut Canadian ham, slices of bacon or sausage patties
  • 6 English muffins sliced
  • 1 tablespoon softened butter optional
  • 6 slices cheddar cheese

Instructions

  • Start by preheating your oven to 375 degrees and spraying a 9 x 13 baking pan with non-stick spray. 
  • In a large mixing bowl, whisk together the eggs, water, salt, pepper, onion powder and parsley. Pour you egg mixture into your prepared baking tray.     1. Hi Coreen!! Yes, make up the entire sandwich before you freeze it. Then, when you are ready, unwrap it and pop it in the microwave for about a minute. Perfect for busy mornings!!!

    1. Thanks Joy! They have definitely become a staple in my freezer. My hubby usually works 10-11 hr days so it’s easy for him to grab one on his way out the door and it’s easy as a snack before dinner when he gets home. Perfect for busy weekend mornings and houses with kids too 🙂
