Mexican Queso Fundido

Do you like Mexican food as much as I do? Is that even possible? In this house, Mexican food gets made all the time. Keep in mind, neither me or Big Scary Mike are of any Hispanic descent but trust me, these two Irish people can put a killing on a bowl of chips and salsa!

My new love is Mexican Queso Fundido . Honestly, it doesn’t get any better than melted cheese, beer and chorizo sausage! How can any of that be bad? And how can anything in this Universe be any better?  But enough of all that! Let’s move on to the important stuff, The Food! This Mexican Queso Fundido dish is a crowd-pleaser from the word from the word GO. It is super easy to make and it will feed a crowd! So when you are figuring out what to make for your Cinco de Mayo gathering, don’t forget to include this Mexican Queso Fundido .

Besides, you need something to soak up all those margaritas!

PS.. If you would like to make this non-alcoholic, double up on your favorite salsa instead of using the lager. It will taste amazing!!

Enjoy!!

  1. I’ve made queso dips before but none like this! I love the chorizo and the beer. Definite crowd pleaser! Can’t wait to put this in the crockpot for our next family get together…

  2. mmmm…this Midwestern girl of Anglo descent will be right next to you putting away the Mexican food! This dip looks so wonderfully colorful! Your photos are great!

I’ve made a cheese/beer queso dip in the past and was disappointed in the flavor. perhaps using a Mexican lager would help. Of course, cilantro and salsa are something I didn’t use before either. Guess who’s going to be making your recipe!!

    1. Hahaha Noel .. girl, pull up a seat!!!! This was the first time I had made this dish and was really nervous about how the lager would add to it but it is the perfect combination all the way. Always fun to scarf down .. um… I mean, politely try new things 🙂
