As I have discussed before, chocolate and peanut butter is my all-time favorite flavor combination.  I mean, seriously.. go ahead and do a search on this website for ‘Peanut Butter’ and you will find a page of assorted desserts showcasing these two items together.  No, really … go ahead… I’ll wait for you… (insert hold music) …. You are back!! See?  I told you!!

I’ve got recipes for Chocolate Peanut Butter Pie, Chocolate Peanut Butter Banana Muffins, Peanut Butter Cups, heck .. I even have homemade Cashew Butter.

So it’s no stretch of the imagination that it was just a matter of time before I would add a Homemade Reese’s Bars dessert to the mix.  This no bake chocolate peanut butter bars dessert is perfect in its simplicity and I can’t think of anything better if you are looking for a quick, easy dessert to entertain with or bring to a potluck and if your house is the one the kids all invade.. you are set, my friend.  You will go from being “Timmy’s Mom” to “Timmy’s Mom is Awesome .. she makes these peanut butter things and there’s chocolate and they are really good … Timmy’s Mom is soooooo Cool”.

How can you even not want THAT title? Trust me, these Homemade Reese’s Bars will take you there.

WHY ADD COFFEE TO CHOCOLATE?

Adding coffee or espresso powder when you cook with chocolate isn’t because you are looking for a mocha-flavored recipe. Rather, coffee is commonly included because it is a great way to enhance the flavor of cocoa powder, resulting in a richer, deeper chocolate flavor.

WHAT DO I DO IF MY MELTED CHOCOLATE SEIZES UP?

If I had a quarter for every time I messed up melting chocolate .. well … we would ALL be on a beach in the Caribbean.  First, glass bowls seem to almost always over heat melting chocolate so use any kind of microwave safe bowl other than glass.  Second, if you introduce even the tiniest bit of water to the chocolate, that will seize it up too.  It hates water and being too hot. The flip side of that is to release seized up chocolate, add super HOT water to the chocolate and stir until it melts again.

HOW DO YOU MAKE HOMEMADE REESE’S BARS?

Easy! To make Homemade Reese’s Bars, start by adding melted butter, graham crackers, brown sugar, sifted powdered sugar and peanut butter to a large mixing bowl.

Using an electric mixer, combine until all ingredients are completely incorporated. Line a 9 x 9 pan with parchment paper and drop in your peanut butter batter. Using your (clean) hands or a spatula, spread the batter out evenly. In a microwave safe dish, add in the semi-sweet chocolate and 1/4 cup of peanut butter along with the instant coffee if using it. Microwave for 2 minutes, stopping after each minute to stir.

When the chocolate is completely melted, pour on top of the peanut butter batter and then spread the chocolate out evenly. Refrigerate Homemade Reese’s Bars for 3 hours or even overnight.

Ingredients

Peanut Butter Bottom

  • 3/4 cup butter melted
  • 1 cup brown sugar
  • 1 cup graham cracker crumbs
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar sifted

Chocolate Topping

  • 12 oz bag semi-sweet morsels
  • 2 tablespoons butter
  • 1 tsp espresso powder (optional)

Instructions

  • Start by adding melted butter, graham cracker crumbs, brown sugar, sifted powdered sugar and peanut butter to a large mixing bowl.
  • Using an electric mixer, combine until all ingredients are completely incorporated
  • Line a 9 x 13 pan with parchment paper and drop in your peanut butter batter
  • Using your (clean) hands or a spatula, spread the batter out evenly
  • In a microwave safe dish, add in the semi-sweet chocolate and butter along with the espresso powder if using it
  • Microwave for 2 minutes, stopping after each 30 seconds to stir
  • When the chocolate is completely melted, pour on top of the peanut butter batter and then spread the chocolate out evenly
  • Refrigerate for 3 hours or even overnight
