Rice Krispie Easter Treats

Springtime is finally here and there are pastel color explosions everywhere you look.

The weather is beautiful, the sun is shining and it is almost time to break out the flip flops. It’s also time to celebrate this amazing time of year with my no-bake Rice Krispie Easter Treats.

We all know (and love) the classic Rice Krispies treat recipe. Heck, I love them so much I even make Lucky Charms Marshmallow Treats for St. Patrick’s Day.

We happily add in melted marshmallow with that crispy rice cereal that talks to you and you have one of everyone’s favorite sweet treat.

How could you possibly improve on such a classic no bake easy treat recipe? 

Easy! … add tons of sprinkles and Easter M&Ms!!

I am just adding in these extras to make an already amazing Rice Krispies Treat that much better.

This is that one easy no bake treat that never lasts long in my house. Seriously, I can make a huge pan and I blink and it seems like the entire pan of treats has taken flight and disappeared.

To make these Easter cereal bars, you will need:

  • Rice Krispies cereal
  • Marshmallows (mini or large)
  • Butter
  • Pastel Easter M&Ms
  • Springtime colored sprinkles

How To Make Easter Cereal Bars

Start by lining a 9 x 13 pan with parchment paper and set aside.

Add butter and marshmallows to a large saucepan and over medium heat, stir continuously and melt until smooth and creamy.

Stir in the rice cereal until completely coated.

Wait 1-2 minutes then stir in the sprinkles and M&Ms.

Turn your Rice Krispies mixture out into your prepared pan.

Using either a 2nd piece of parchment paper or after spraying your hands with non-stick spray, gently press down on the cereal to fill in your pan.

Let cool at least 30 minutes, cut into squares and serve.

Pro Tips for Perfect Easter Treats

  • Be sure to keep stirring your marshmallow mixture while it is melting to make sure it doesn’t burn.
  • You want to wait 1-2 minutes after adding your cereal to the marshmallows to add in your M&Ms and sprinkles. It helps keep the color vibrant.
  • Don’t press down too hard when making your cereal bars. Your Rice Krispie Treats may come out hard and since your M&Ms are warm, they may break open.
  • You can use parchment paper, wax paper or even just coating your hands with butter or non-stick spray when pressing the cereal into the pan. These ideas help the cereal from sticking while you form your bars.
  • Don’t have marshmallows on hand but craving Rice Krispies bars? A jar (7 oz.) marshmallow crème can be substituted for marshmallows.
  • If you are using regular sized marshmallows, use a 10 oz package. Have mini marshmallows? Use four cups instead. Perfect either way!
  • Use a silicone spatula or spoon to stir your marshmallows and cereal together. Helps the mixture not to stick to your spoon.

Storing and Freezing

Rice Krispie Easter Treats can be stored in an airtight container or large zip top bag at room temperature for 2-3 days.

If you move the cereal bars to the refrigerator, they will be very hard. Leaving them at room temperature keeps them soft and gooey.

To make ahead of time and freeze, separate layers of treat bars with wax paper and store in an airtight container. Freeze for up to 5-6 weeks.

When ready to use, remove from freezer and let sit at room temperature for 15 minutes before serving.
