Pineapple Chili Lime Slow Cooker Pork Sandwich is both sweet and spicy and when you add the Hawaiian slaw on top.. well … it’s a crunch fest!!! I promise you, there is not a more perfect pairing than these two amazing foods together.

energy ambition time to spend on it. It’s also the ideal thing to serve when you are hosting to a group of people like parties or maybe a girls night in or a tailgating invasion. Let’s not all forget that football starts next month and you know that you need to break out the food love for THAT! I don’t know about you but my house usually gets invaded by a bunch of big, hungry, power chowing guys and anything that can be cooked in a slow cooker is always a big hit.

- Pineapple Chili Lime Slow Cooker Pork Sandwich
- 1/2 cup soy sauce
- 6 tbl honey
- 3 tbl vegetable or olive oil
- 3 limes , juiced
- 5 garlic cloves , minced
- 2 tbl garlic powder
- 2 tbl onion powder
- 2 tbl smoked paprika
- 2 tsp red pepper flakes or powder
- 3 tbl Sriracha .. or more if you want it spicier
- 4 tbl brown sugar
- 2 cup pineapple juice
- Cajun Seasoning Salt
- 3 lb pork butt
- Pineapple slices for garnish
- Sandwich rolls
- Hawaiian Slaw
- 2 cups pre-packaged broccoli slaw
- 1 cup purple cabbage , thin sliced
- 1/2 cup pineapple juice
- 3 green onions , sliced
- 3 tbl rice wine vinegar
- 1/2 tbl ginger root , grated
- 2 tsp black sesame seeds
- 1 tbl soy sauce
- 2 tbl honey
- 1/2 lime , juiced
The night before, combine all of the ingredients for the Pineapple Chili Lime Slow Cooker Pork Sandwich together in a large bowl.
Once combined, scoop out 1 cup of the sauce and refrigerate separately
Take remaining sauce and pour into a large zip top bag. Add in the pork butt and seal the bag, removing as much air as possible.
Massage the pork butt with your hands to ensure completely coated in the sauce. Refrigerate overnight
The next morning, transfer the pork butt to the slow cooker and add in all of the sauce from the zip top bag.
Set slow cooker to Low and cook for 8-10 hours
Once cooked, remove the pork butt from the slow cooker and shred into chunks using 2 forks. Sprinkle with Cajun Seasoning Salt to taste
Pour out approximately 2/3 of the remaining liquid from the slow cooker and skim off any of the fat that may be floating on top
Return the pork to the liquid and set slow cooker to Warm. Cook for another 30 minutes
To make the Hawaiian Slaw, combine the broccoli slaw (I usually pull out any large broccoli pieces), cabbage, green onions, vinegar, ginger, pineapple juice, soy sauce, lime and honey.
Refrigerate while the pork is finishing off cooking.
Once the pork is done, take the pineapple chili lime sauce you held out and pour approximately 1/3 of it over the pork and stir to combine. Serve the remaining as a finishing sauce.
Remove the slaw from the refrigerator and stir in the black sesame seeds.
Serve immediately and build your sandwiches!
