Wednesday… the most underrated and unloved day of the week. It’s the peak of the week as it slides downhill to the freedom of the weekend. Why not spice up your hum-drum Wednesday night with something that will knock your socks off? How about a mid-week date night? .. Or invite a friend over for an easy and delicious meal out of the blue? … Or how about just making YOURSELF a dinner that makes all the stress and running around of the work week WORTH IT? Let’s be honest, by the time mid-week finally rolls around we are already tired. All of us Momma’s work hard to keep the world spinning and sometimes it can be such a thankless job that we don’t even treat OURSELVES to something nice. An elegant meal to make you feel pampered on a WEDNESDAY??? Yes, please! I give to you Prosciutto Wrapped Beef Tenderloin with Parmesan Herb Orzo. Seriously!
Now, I can’t take credit for thinking this meal up (thank you, Food Network, Cooking for Real) but I can, at the very least, share this goodness with those that matter most, you guys! I found this meal to be just what I needed during a particularly stressful week and a Wednesday date night (queue the Happy Anniversary song, please) with my husband was just what the doctor ordered! Keep in mind that this romantic anniversary meal was consumed while watching American Horror Story so the romance part of this equation is somewhat lacking but hey.. it works for us (LOL). When you are people who purposely get married at Halloween, well.. let’s just say there is a pretty fair chance our idea of romance may skewer a bit differently than yours 🙂
However, when serving this to YOUR loved one, you may want to turn the TV first.. or at least maybe find something with not so many scary clowns. Just a suggestion, you make the call.
Prosciutto Wrapped Beef Tenderloin with Parmesan Herb Orzo
You will need:
1 lb beef tenderloin, cut into 2″ squares
1/4 lb thin sliced prosciutto
1 tbl olive oil
1 tbl butter
1 small shallot – diced
1/2 cup chicken stock
1 tbl course ground mustard
2 tbl heavy cream
2 tbl parsley
fresh ground pepper
You will notice that there are more ingredients than just beef and prosciutto. This recipe includes a beautiful pan sauce to add over your beef before serving. Pan sauces are always an added extra, in my opinion, so I am including it as part of the recipe but you can decide to use or not use depending on your preference. Myself, I thought it was amazing so I would suggest giving it a try.
Start by cutting your beef tenderloin into 2 inch squares. Sprinkle all sides with fresh ground pepper.
Wrap each cube with a full piece of prosciutto, like you would wrap a small gift, and set aside seam side down on a separate plate. When all of your beef cubes are wrapped, you and your plate o’ beef move over to the stove.
Heat up the olive oil and butter in a large skillet over medium heat. Once brought to temperature and the butter has melted, add beef cubes seam side down and then saute until are sides are crisp (8-10 minutes brought mine to medium rare.. add an extra 30 seconds to each side if you would like yours a bit more done). Remove beef and set aside to rest. Do not discard the butter / oil already in the pan. That is FLAVOR LIQUID GOLD!!! Add your shallots to the pan and saute for 1 minute. Next, add in the chicken stock and with the back of a spoon, scrape up all the little pieces of goodness that have stuck to the bottom of the pan. Nom! Nom! Nom! Whisk in your mustard and cream (I always go a bit heavier on the cream because that’s just how I roll) and then check your seasonings. Remove from the heat and spoon over your tenderloin pieces. Garnish with parsley and be prepared to be amazed!!

Parmesan Herb Orzo
You will need:
2 1/2 cup orzo
3 cloves minced garlic
1/4 cup diced red onion
1/4 cup diced parsley
1 lemon zested and juiced
32 oz chicken stock
1 tbl olive oil
1/2 cup fresh grated Parmesan cheese
1/2 tsp salt
pepper to taste
This side dish is super fast and very flavorful. If you are not familiar with orzo, it is rice shaped pasta. It has a very different mouth feel than you would expect and is really a nice change from the usual.
Start by bringing your chicken stock to a boil and then adding in your orzo. Prepare based on box instructions. Remove and drain when cooked and then mix with all the other listed ingredients. Season to taste. Yup… THAT HARD!!
Serve the orzo together with the beef tenderloin and you have the makings of a beautiful dinner.. even if there are scary clowns playing in the background 🙂
