We have a new rule, People!! If anyone knows of anything amazingly awesome (AND PURPLE), we need to all agree to let me know. Apparently, purple potatoes have been around “forever” and I have been completely unaware. This madness must not happen again. Ok, now that we are all on the same page… let’s talk PURPLE!!
I am a self proclaimed Halloween junkie. I have made peace with my weakness and as the Queen of Halloween, I am often encouraged against better judgement to exploit my addiction to the highest power (Thank you, nephew Casey). We set up big yard haunts for the kids, I have spent more on my collections of animated monsters than I have on some of the cars I have owned, we throw huge parties every year.. I GO BIG!! So big, that Big Scary Mike and I were even married at Halloween and yes, you guessed it… Halloween colors a.k.a. BLACK and PURPLE. I love purple .. everything and anything!! So please imagine the ridiculous amount of sheer joy that coursed through my body when I learned that purple potatoes existed. Stark raving sheer delight!! Just ask the produce guy at my local supermarket. Believe me, it was a day HE will never forget!
Now that I have my bags of purple potatoes, what do I do with them? They are cute and little and when you cut into them they are a dark purple color through and through.
Absolutely gorgeous!! … well, as gorgeous as potatoes can be, I guess. What to do? What to do? Obviously, they can be roasted in the oven with some rosemary and garlic. They could be boiled and mashed with butter like you would with any other potato. They could be used in any and every way a recipe tells you to use a potato. But these are special, magical potatoes!!! … THEY ARE FREAKING PURPLE!!!! Then it comes … and it is heaven!
Purple Potato Mash Up
You will need:
4 tbl butter
3 lbs purple new potatoes, halved
3 cloves garlic, diced
Salt and freshly ground black pepper
1 cup heavy cream
1 1/2 cup shredded cheddar cheese (grate yourself)
1/2 cup grated Parmesan
1/2 cup grated Asiago cheese
1 tsp onion powder
1/2 cup panko breadcrumbs
Start by preheating your oven to 375 degrees. Grease the sides and bottom of a 9×9 baking dish with butter or non-stick spray. Set aside.
Since I have never worked with purple potatoes, I didn’t know how they reacted with heat. Instead of boiling the potatoes, I steamed them. In a large pot bring a few inches of water to a boil with a large steamer basket or colander in place. Put the potatoes in the basket, cover and steam until tender, about 15-20 minutes or until fork tender. Add in your garlic, butter and cream. Mash your potatoes until you reach the consistency you like and the stir in 1 cup of your cheddar, all of your Asiago and half of your Parmesan cheese. Salt and pepper to taste. Spoon into your prepared baking dish. In a small bowl, combine 1/2 cup cheddar, 1/4 cup Parmesan and your breadcrumbs. Sprinkle over the top of the potatoes and bake 25 minutes or until the top is golden brown.
Please rush right out and find some purple potatoes if you have never used them before. They are truly a fun twist on plain ol’ potatoes!!! … and they just make you HAPPY!
