What is the best part of my work day? One word, lunch!
I absolutely love lunch time. Breakfast holds a little bit of pressure to it. You want to make sure it’s healthy and nutritious so you start your day the right way. Dinner time again holds more pressure because you want to provide a delicious, loving meal for your family after a long day. But lunch time? That’s all you! And one of my most favorite things to treat myself with at lunch time is a Scramble Bagel Sandwich.
What is a Scramble Bagel Sandwich you ask? It is the greatest combination of breakfast and lunch that you will ever have. And what’s more, it is perfect for kids on their way back to school.
Every parent knows that this time of year is especially hectic. You are being pulled into a thousand different directions between school supplies and bus schedules and after-school activities …so when it comes to packing their lunch, what is a busy Mom or Dad to do? I will tell you, make things easy!
Scramble Bagel Sandwiches are packed full of delicious meats, cheeses, eggs and hash browns and completely based on (you) your child’s favorite foods and the best part is that you know what your child is eating for lunch. No lunch room mystery meat or trading lunches for something less nutritious. Plus these sandwiches are just fun! No boring bologna and cheese or PB&J for your child. No way! We are elevating lunchtime to Rockstar status with a new and creative take on the humdrum brown bag lunch.
Now I am a huge fan of the original concept of the breakfast scramble. Basically, a scramble is taking the best of all breakfast foods and mixing it all together and eating it as it is. I have no idea why I have not added it to this website yet but it is probably the breakfast that I made the most. I make it for breakfast, I’ll make it for lunch, and Lord knows I have fed it to Big Scary Mike for dinner more times than I can count. It’s easy and quick and you know you can trust the ingredients you are putting into it. So now take that scramble idea and turn it into a sandwich and it is perfect for lunch time. It will keep your child focused and let’s be honest at 2 in the afternoon that’s a hard thing to do.
So how did it evolve into a breakfast staple to a lunch time favorite sandwich? Walmart opened a new store down the street from me. I love shopping at Walmart because they are so convenient and I can always find everything I need in one store without having to jump from place to place searching for various ingredients. As a food blogger that’s really important. So I had to check out the new location and let me tell you, talk about clean and organized. I just love new stores! Anyways, as I turned into the refrigerated section of the new store, I found my new favorite lunch meat and cheese product, Castle Wood Reserve®.
Castle Wood Reserve® are premium meat and cheeses that would rival any deli. They really rely on putting forth a trusted quality product without the heavy price tag. Castle Wood Reserve® has really become my go-to when it comes to cheeses and lunch meats for Mike’s sandwiches. Also, exceptional for random snacking right out of the refrigerator cheese drawer.
I know I’m not the only one who does that.
My tummy was grumbling and I had already picked up a few of the items I needed to go home and make my scramble and then I decided I would turn it into a sandwich and have the perfect lunch. I picked up a Castle Wood Reserve® Colby Jack cheese and my Castle Wood Reserve® Virginia Brand Smoked Ham and quickly scampered home because when I say my tummy was rumbling, believe me, people two aisles over could hear it!
I drove home and pulled out my griddle and started to cook my hash browns. While those were cooking, I diced up some of the my Castle Wood Reserve® Colby Jack cheese and my Castle Wood Reserve® Virginia Brand Smoked Ham and added the ham to cook alongside of the hash browns.
I scrambled a few eggs and poured them into a small skillet and in no time, everything was cooked and it was time to put it all together.
I added in the Castle Wood Reserve® Virginia Brand Smoked Ham to my hash browns and topped it with the diced Castle Wood Reserve® Colby Jack cheese.
I finished scrambling my eggs and onions and then added them on top of the pile and mixed it all together. While the cheese got all melty and delicious, I toasted up a couple of pretzel bagels because hey, pretzel bagels are my favorite. Then I spooned my scramble on to the bagel topped with another piece of Castle Wood Reserve® Colby Jack cheese and then added the top of the bagel and what we had was the perfect lunchtime solution. Delicious, hot and fast!!
What more do you want in a lunch? Plus, this is a meal your kids will love! Castle Wood Reserve® has so many delicious meats and cheeses to choose from, you can’t go wrong. Plus, lunch time is a lot different now from when I was a kid. In my day (circa 1982) lunch time consisted of warm bologna and cheese sandwiches or a mangled PB&J pulled from the bottom of your backpack. These days things are much different. Schools have refrigerators and microwaves at their disposal so your kids will have no problem heating up this amazing lunch that you
whipped up in ten minutes slaved over for hours.

- 20 oz refrigerated hashbrowns
- 2 tbl canola oil
- 4 green onions , diced
- 1/2 tsp salt
- 1/4 tsp pepper
- 4 eggs , beaten
- 2 tbl water
- 1 tbl butter
- 4 oz Castle Wood Reserve® Colby Jack Cheese (or any Castle Wood Reserve® flavor you like)
- 4 oz Castle Wood Reserve® Virgina Brand Smoked Ham (or any Castle Wood Reserve® flavor you like)
- 4 bagels , toasted
Start by preheating large griddle or skillet to 350 degrees (medium high)
Add canola oil and then scatter hash browns onto griddle / skillet once oil is hot
Sprinkle with salt and pepper and let cook 5 minutes then flip to continue browning
Dice 3 slices of cheese and 4 slices of ham into bite size pieces
Move hash browns over a bit and add ham to empty spot to brown slightly
Once heated, add ham and diced cheese to hash browns
Add butter to small skillet and bring heat to medium
Dice green onions and add to small skillet.. Cook 2 minutes
In a small bowl, combine eggs and water and beat until combined, Pour into small skillet and move eggs around continuously until scrambled
Add scrambled eggs to hash brown pile and mix all ingredients together until well combined
Toast bagels on skillet directly or in toaster
Once toasted, pile on scramble on top of bagel bottom and top with another piece of Castle Wood Reserve® Colby Jack cheese and top with remaining bagel half
Serve immediately or let cool and store in air tight bag or container.
To reheat, remove from container and microwave 1 minute on high
