These Soft Chocolate Sugar Cookies are rich with chocolate flavor and just the right amount of sweetness all packed in a perfect soft baked sugar cookie.
Do you want to know what makes the world go ’round? Soft Chocolate Sugar Cookies… oops, just kidding! .. or AM I???
Let me share with you what keeps humanity alive and kicking on a regular basis… contrary to popular belief it is NOT Soft Chocolate Sugar Cookies … but it IS puppies, the gauge in your car that tells you how many miles you have left until you run out of gas and ….. OH WAIT, I LIED… Soft Chocolate Sugar Cookies!!!!!
In no determinable order…
Now, puppies are a no brainer and that extends to puppies of all ages. My dogs range from seven years old to two years old (that sweet little pup is referred to as The Devil, by the way) and it really doesn’t matter what their real age is, if you are a dog lover they will always be puppies in your eyes. I’m pretty sure that applies to real human type children as well, at least that is what I have been told from my mommy friends. They are all cute, they are all reasonably messy and destructive and they all steal your heart… each and every one!
Like this .. this is a perfect example of why we can’t have nice things. #bulldogintheblinds (by the way, thanks for not awkwardly mentioning the lifesize skeletal horse Halloween prop in the foreground… sigh…. )
Next, that gas gauge thing in your car that narrows down to the exact mile and tells you exactly how long you have until you HAVE to stop for gas???… PRICELESS! I do not have that mind-blowing piece of technology in my current vehicle, I have to play Russian Roulette with the little light up icon shaped like a gas pump to let me know my five mile ticking time bomb has started. Yes, yes… I know the answer to this problem but leopards do not change their spots and Heather’s do not stop for gas all random and willy-nilly. Big Scary Mike? He’s at our local gas station on a daily basis.. LITERALLY every day. It’s like some weird happy place for him. He stops for his energy drinks, he stops for his coffee, he goes back for gas, he grabs snacks, he even gets welcomed in “Norm” fashion every morning from the girls behind the counter.
This is not a world I feel the need to breach.. I’m willing to play fast and loose with my go-go juice!
That brings us to the best/tastiest/most amazing reason the world is still moving on… Soft Chocolate Sugar Cookies. Is there any part of those words in that perfect combination that makes you feel any way less that happy, comforted and loved?
A salad will never love you like Soft Chocolate Sugar Cookies can… remember that!
These cookies are the reason you buy the whole gallon of milk vs the pint of milk. And if you are inclined to share these soft pillowy bites of goodness with someone you love … well.. you are a better person than ME because me first inclination was to grab them all up and RUN!!! I’ve seen the destruction the center of my world can do to a plate full of cookies and for just one moment, they were MINE… ALL MINE!! (Insert image of Daffy Duck and his Big Diamond HERE). Then I remembered that legally what is mine is his and what is his is mine … (not relevant, he has NO cookies!!) … and I decided to be the good wife I tell him I am and share my Soft Chocolate Sugar Cookies with him.
Reluctantly. Begrudgingly. Unhappily.
My over the top reluctance to share is not an everyday character flaw, it’s just that these cookies are that good. Soft but with a slight hint of crunch resistance, rich with chocolate flavor and the perfect amount of sweetness, you will be hard-pressed to find another cookie so perfect. Plus they are awesome for making ice cream sandwiches like my Caramel Macchiato Ice Cream Sandwiches. Multi functional handfuls of happiness.
That my friends, keeps the world spinning.
- 3/4 cup butter
- 1 1/3 cup sugar + 1/4 cup separate for rolling
- 2 tbl brown sugar
- 2 tbl strong black coffee
- 2 cup flour
- 2/3 cup unsweetened cocoa powder (I actually did mine half regular and half dark chocolate)
- 1 tsp baking soda
- 1/4 tsp salt
- 2 eggs
Preheat oven to 350 degrees and cover baking sheet with parchment paper. Add 1/4 cup sugar to a small bowl and set aside.
Start by combining butter and sugar in a large bowl. Using a hand mixer, beat until mixed well.
Add in brown sugar, coffee, and eggs and beat to combine
In a separate bowl, sift together the flour, baking soda, salt and cocoa. Slowly incorporate into the butter mixture
Batter will be very thick.. that's a good thing!
Drop a spoon full of batter into you hand and roll lightly to make a ball and then roll in the bowl of extra sugar before transferring the cookie to the baking sheet
Bake cookies for 9-11 minutes and let cool on baking sheet for 1 minute after removing them from the oven
Transfer cookies to cooling rack to finish cooling then store in airtight container
