Let me share with you what keeps humanity alive and kicking on a regular basis… contrary to popular belief it is NOT Soft Chocolate Sugar Cookies … but it IS puppies, the gauge in your car that tells you how many miles you have left until you run out of gas and ….. OH WAIT, I LIED… Soft Chocolate Sugar Cookies!!!!! In no determinable order…

Now, puppies are a no brainer and that extends to puppies of all ages. They are all cute, they are all reasonably messy and destructive and they all steal your heart… each and every one!

A-hem .. back to the Soft Chocolate Sugar Cookies. Is there any part of those words in that perfect combination that makes you feel any way less that happy, comforted and loved? A salad will never love you like Soft Chocolate Sugar Cookies can… remember that!

These Soft Chocolate Sugar Cookies are the reason you buy the whole gallon of milk vs the pint of milk. And if you are inclined to share these soft pillowy bites of goodness with someone you love … well.. you are a better person than ME because me first inclination was to grab them all up and RUN!!! I’ve seen the destruction my hubby can do to a plate full of cookies and for just one moment, they were MINE… ALL MINE!! (Insert image of Daffy Duck and his Big Diamond HERE). Then I remembered that legally what is mine is his and what is his is mine … (not relevant, he has NO cookies!!) … and I decided to be the good wife I tell him I am and share my Soft Chocolate Sugar Cookies with him.

Reluctantly. Begrudgingly. Unhappily.

WHY ADD COFFEE TO CHOCOLATE?

Adding coffee when you cook with chocolate isn’t because you are looking for a mocha-flavored recipe. Rather, coffee is commonly included because it is a great way to enhance the flavor of cocoa powder, resulting in a richer, deeper chocolate flavor.

WHAT MAKES A CHEWY SUGAR COOKIE?

High moisture content makes a cookie chewy so the recipe, baking time, and temperature must be adjusted to retain moisture. Binding the water in butter, eggs, and brown sugar (it contains molasses, which is 10 percent water) with flour slows its evaporation which makes the cookie chewy.

HOW DO YOU MAKE SOFT CHOCOLATE SUGAR COOKIES?

Easy! To make Soft Chocolate Sugar Cookies, preheat oven to 350 degrees and cover baking sheet with parchment paper. Add 1/4 cup sugar to a small bowl and set aside. Start by combining butter and sugar in a large bowl. Using a hand mixer, beat until mixed well. Add in brown sugar, coffee, and eggs and beat to combine. In a separate bowl, sift together the flour, baking soda, salt and cocoa. Slowly incorporate into the butter mixture. Batter will be very thick.. that’s a good thing! Drop a spoon full of Soft Chocolate Sugar Cookie batter into you hand and roll lightly to make a ball and then roll in the bowl of extra sugar before transferring the cookie to the baking sheet. Bake Soft Chocolate Sugar Cookies for 9-11 minutes and let cool on baking sheet for 1 minute after removing them from the oven. Transfer cookies to cooling rack to finish cooling then store in airtight container.

My over the top reluctance to share is not an everyday character flaw, it’s just that these Soft Chocolate Sugar Cookies are that good. Soft but with a slight hint of crunch resistance, rich with chocolate flavor and the perfect amount of sweetness, you will be hard-pressed to find another cookie so perfect. Plus they are awesome for making ice cream sandwiches like my Caramel Macchiato Ice Cream Sandwiches. Multi functional handfuls of happiness.

Ingredients

  • 3/4 cup butter, softened
  • 1 1/3 cup sugar + 1/4 cup separate for rolling
  • 2 tablespoons brown sugar
  • 2 tablespoons strong black coffee or one tablespoon instant coffee
  • 2 cup flour
  • 2/3 cup unsweetened cocoa powder (I actually did mine half regular and half dark chocolate)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs

Instructions

  1. Haha, your “bulldog in the blinds” is an ongoing battle we have, although ours would be “rottie mix in the roman shades”. She LOVES to try to open the shades to bark at everyone who walks by, which… does not work with downtown city living, when people walk two feet outside our house 24 hours a day, haha. Your cookies look great – exactly like the kind of treat my dog would try to steal off the counter. Sigh.

    1. Julie.. I feel your pain! Our street is pretty low key but especially after work a lot of people walk or run or kids are riding their bikes. My security team (aka Dog #2, Dog #3 and Dog #4… Dog #1 feels she is too pretty to be involved) then take to alerting us of everyone that goes by. This is not to be outdone by the outright verbal assault that comes forth from the entire pack when the neighborhood stray cat walks by across the street.. I had no idea a grey tabby was such a threat to my wellbeing 🙂 Your baby is just trying to keep you safe too .. like from leaves and grocery bags blowing in the wind.. very dangerous things like that <3
