Birds are chirping, the weather is beautiful and baseball is once again on TV. The air is sweet with fresh mowed grass, splashing and squeals carry over from the pool two housed down and hot dogs and burgers are being grilled outside for family dinners. This time of year, everyone wants to be outside doing something and after The Long Winter that we had this year there is nothing better than feeling that sunshine on your face. And what better way to celebrate the season than with an easy, refreshing springtime dessert that bursts with pink lemonade flavor and is ready in minutes?
Let’s be honest, springtime is all about enjoying time with your family outside and soaking up the beautiful weather before summer comes barreling through. These Strawberry Pink Lemonade Mini Pies are the perfect dessert to celebrate the season. Just combine a few items in a bowl, spoon the filling into these adorable Keebler® Ready Crust® Mini Graham Cracker Pie Crust and chill for 30 minutes and you have the perfect dessert! Quick, easy and bursting with springtime strawberry pink lemonade flavor, nothing could be easier or better!
You know how it happens, your phone rings on a beautiful Saturday morning and next thing you know you have a house full of people on their way over to visit and and spend time in the pool. You need a fast, easy dessert that you can pull together quickly that will taste amazing and still let you spend time with you family.
I’ve got you covered! This just happened to me and let me tell you, this easy dessert idea is perfect! I ran over to my local Walmart where I know they have everything I could need. With a day planned of BBQ, swimming pools and kids, I wanted something small cute and tasty. As I was walking down the cake and pie crust aisle I spotted the Keebler® Ready Crust® Mini Graham Cracker Pie Crust and I knew that they would be perfect. Next I wanted something fresh and light and I quickly found what I was looking for in the refrigerated section. Dannon® Light & Fit Strawberry Cheesecake Greek Yogurt and my recipe started coming together in my brain. Pink lemonade and strawberry cheesecake combination? What could be more delicious? Next, I knew I need to find the Reddi-wip® and I had to do was turn around and there it was! Perfect!!
Then I walked around and gathered the rest of my ingredients to make these amazing Strawberry Pink Lemonade Mini Pies, stopping off in their produce department to grab some fresh lemons. Is there anything better?
That’s my favorite thing about Walmart. They carry everything you need for a one-stop-shop experience.
I ran home and quickly set about making my mini pies. One thing I always have on hand is candied lemon pieces. They are the perfect little add in to really make anything pop with sweet lemon flavor. But then I realized I was completely out of candied lemon pieces and didn’t have any ready but that’s ok, that is not a problem. They are easy to make and take no time at all. Start by bringing sugar, water and lemon juice to a simmer and then adding in lemon slices. Let them simmer for 15 minutes and then remove them to a parchment paper lined plate. Let them cool for 30 minutes and then pop them into your freezer for another 20 minutes. Remove them and you have candied lemon slices!!
See? Easy peasy!!
So to make these easy Strawberry Pink Lemonade Mini Pies, I added the cream cheese to my mixing bowl and beat until smooth and creamy. Then I added in the Pink Lemonade Concentrate, the pudding mix, the Dannon® Light & Fit Strawberry Cheesecake Greek Yogurt (so yummy!) and the Reddi-wip®. I also added in a few drops of red food coloring to pink it up… that part is totally optional but who doesn’t love bright pink food?
I moved my mixing bowl to my refrigerator so my pie filling could chill while my candied lemon pieces were doing the same in the freezer. After 20 minutes, I was ready to go!
I removed the rinds from my lemon slices and then cut up my candied lemon into small pieces and stirred them into my pie filling. Then I spooned my pie filling into the Keebler® Ready Crust® Mini Graham Cracker Pie Crust, smoothed out the top to make them pretty and grabbed my can of Reddi-wip®. I would not be lying if I said that my entire house STOPS on a dime when that SHHHHHHHH.. sounds comes out of my kitchen. My husband suddenly finds an excuse to walk through the house, four dogs come running into the kitchen with the expectation that they too will get to sample their favorite sweet treat in a can (Thanks Mike for teaching them to love Reddi-wip®!) and it’s all I can do to keep the can of Reddi-wip® to myself to use in my recipe. But I won this fight and my little Strawberry Pink Lemonade Mini Pies are perfectly topped, garnished and ready for the kids to arrive.
These Strawberry Pink Lemonade Mini Pies are the perfect way to celebrate the beautiful springtime weather and making memories with family. - Mini Pies
- 2 - 5.3 oz tub Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt
- 1 13 oz can Reddi-wip®
- 3 pkgs Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6-count)
- 8 oz cream cheese
- 1 cup Reddi-wip®
- 2 - 3.4 oz package Cheesecake Instant Pudding Mix
- 1 can frozen Pink Lemonade Concentrate drink mix
- 3 -4 drops red food coloring (optional)
- Candied Lemon Add-In
- 2 Large lemons
- 1 cup sugar
- 3/4 cup water
- 2 tbl fresh lemon juice
Candied Lemon Slices
In a saucepan over low-medium heat, combine sugar, water and lemon juice and simmer until sugar is melted
Slice lemons into 1/4 inch slices and remove any seeds - add lemon slices to sugar water and lay in a single layer - simmer for 15 minutes
Remove slices to a parchment paper lined plate and let cool for 30 minutes - move to freezer for 20 minutes
To make the Mini Pies add cream cheese to a medium sized mixing bowl and beat until light and fluffy
Add in Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt, instant pudding mixes, drink concentrate, food coloring and Reddi-wip®. Mix until well combined
Move mixing bowl to refrigerator to chill until candied lemon slices are firm
Once chilled, remove candied lemon slices and remove rind - dice and stir into pie filling. Save a lemon slice for garnishing
Spoon pie filing into Keebler® Ready Crust® Mini Graham Cracker Pie Crust and top with Reddi-wip® and a candied lemon wedge
Serve immediately and enjoy!
