There are just some summer desserts that are too good to be true.  This Triple Berry Crisp is one of them.

Sweet, tart, juicy berries layered under a buttery crunchy oat topping! Yes, please!!!

This is one mixed berry dessert that is both bright and colorful to look at and 100% dangerously delicious to eat

… to the point where embarrassment will set in if confronted with exactly HOW MUCH of this fruit crisp of it you have devoured. #reallifeproblem

Crisp or Cobbler?

So what is a berry crisp? Basically, this is an easy dessert of baked fruit with a crunchy flour, oat and sugar topping.  Yeah, this mixed fruit crisp rocks!!

Whereas a cobbler is a deep-dish baked fruit dessert with a thick pie dough or biscuit dropped topping, a crisp isn’t so heavy. 

I think of it as cobblers are winter food and berry crisps are summer and spring.

The Best Berry Crisp Recipe

  • Easy – Super easy fruit crisp recipe to make without a mile long ingredient list, this mixed berry crisp is foolproof!

Triple Berry Crisp Ingredients

  • Frozen mixed fruit – I chose blackberries, blueberries and raspberries but any mixed fruit you like will work.
  • All purpose flour – This is what binds your crisp filling together.
  • Sugar – Sweetness.
  • Lemon – A bit of acidity from the lemon cuts through the sweetness of the berry crisp filling.
  • Vanilla – Flavor.
  • Salt – Helps bring out the berry flavors.
  • Old fashioned oats – Adds crunch to your crisp topping.
  • Brown sugar – Sweetness.
  • Butter – Buttery flavor.
  • Walnuts – Crunch.
  • Cinnamon – Warm comforting flavor.

How To Make Mixed Berry Crisp

  • Prep & Preheat – To make this easy berry crisp recipe, preheat oven to 350 degrees and spray a 9 x 9 baking pan with non stick spray.  Set aside.
  • Mix filling – In a large bowl, mix all of the ingredients for the Berry Filling. Pour into your prepared baking pan.
  • Make crisp topping – In a smaller bowl, combine all of the ingredients for the Crisp Topping. 
  • Add Topping – Sprinkle crisp topping on top of the Berry Filling and lightly spread out evenly.
  • Bake – Place pan on a baking sheet lined with parchment paper (in case of spillage) and bake for 45 minutes.
  • Cool – Remove from oven and let cool 10 minutes before serving.  Leftovers can be covered in plastic wrap and stored in the refrigerator.

Pro Tips for Perfect Summer Crisp

  • Use and berry combo you like. You can use any combination of berry flavors you like in this easy crisp recipe. The bag of mixed berries sold in my grocery store is raspberries, blueberries and blackberries and it is my favorite mixture whenever I make this crisp.
  • Stock up on sale day. Grab a few bags of frozen berries when they are on sale so you always have them on hand.
  • Fresh berries are fine to use. If you decide to use fresh berries, reduce the baking time by 5-10 minutes.
  • Make your crisp ahead of time.  You can make the berry filling and the crisp topping ahead of time. Just put together your berry crisp and keep it covered in the fridge until you are ready to bake it.
  • Let your crisp sit for a few minutes before serving. Like most baked desserts, your berry crisp filling needs a bit of time to set and cool once it comes out of the oven so that your filling isn’t runny.
  • Protect that yummy crisp topping. If the crisp topping starts to get a little too brown too soon, lay a bit of foil on top of your baking dish to protect it.

How to Store Triple Berry Crisp

To keep your Triple Berry Crisp fresh, cover leftovers with foil or an airtight container.

Store your crisp in the refrigerator where it will stay fresh between 3 and 5 days.

Fresh or Frozen Berries 

This summer crisp recipe can be made using either fresh or frozen berries but I prefer frozen berries.

I choose to use frozen berries for my crisp because sometimes fresh berries aren’t in season or are hard to find.

Plus frozen berries are frozen at the peak of freshness so no icky past prime fruit in the mix. 

I also try to grab a few bags when they are on sale so I always have them on hand in my freezer.

The Best Berries for Fruit Crisp Recipe

I grabbed a bag of frozen mixed berries to make this recipe and it included blueberries, raspberries and blackberries.

I love the sweetness and tartness of those particular mixed berries together in this crisp recipe but you certainly can substitute the fruit choices if you have a specific preference.

Whatever fruit you decide on, just make sure you have 5-6 cups of berries for your crisp.

Ingredients

Triple Berry Fruit Filling

  • 5-6 cups raspberry, blueberry, blackberry frozen
  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh lemon juice
  • 1 teaspoon vanilla

Crisp Topping

  • 1 cup old fashioned oats
  • 1 cup all purpose flour
  • 1/2 cup sugar
  • 2/3 cup brown sugar packed
  • 1 1/2 teaspoons cinnamon
  • 1 cup walnuts chopped
  • 2/3 cup butter melted

Instructions

    1. Hi Melissa! I would say you can make the berry filling ahead of time and the crisp topping ahead of time but leave separate until you are ready to bake it. If you put it all together in advance, the crisp topping will get soggy. Or you could make the whole thing, bake it and rewarm it covered in foil in a 350 degree oven for about 15-20 minutes.. take the foil off and let the top crisp a bit.
