With July 4th right around the corner, it is time to start thinking about summer parties, 4th of July barbeques and most of all.. THE RED WHITE AND BLUE DESSERTS! It’s such a fun time of year to show your creative side and what better way to celebrate the 4th of July than with they super easy, super tasty 4th of July Cake Mix Whoopie Pies!

Land of the free and home of the brave, it’s a privilege and an honor to be able to celebrate our country each year.  The older I get, the more I understand that.  Most of us have family or friends who have served our country and sacrificed untold measures so that we are still able to grill our hot dogs and fire off our sparklers and as I watch the young men and women that I have know since they were babies carry on that noble tradition, July 4th now holds a new meaning closer to my heart.

All this being said, it’s a requirement for everyone to step up their game on America’s birthday.  Regular ol’ whoopie pies??  Heck no, they had better be screaming red white and blue 4th of July Cake Mix Whoopie Pies!!!

WHAT IS A WHOOPIE PIE?

Traditionally, whoopie pies are a dessert that are made up of two cake-like cookies sandwiching a creamy, frosting-like filling. Making Whoopie Pies using a cake mix is a perfect solution and then filling the whoopie pies with buttercream frosting really takes them to the next level.

HOW DO YOU STORE 4th OF JULY CAKE MIX WHOOPIE PIES?

Store your 4th of July Cake Mix Whoopie Pies, covered with plastic wrap, at room temperature for up to three days if you are using homemade buttercream frosting.  If you are using store bought frosting, store your 4th of July Cake Mix Whoopie Pies in the refrigerator.

HOW DO YOU MAKE 4TH OF JULY CAKE MIX WHOOPIE PIES?

Easy! Preheat your oven to 375 degrees and spray a cookie sheet with non-stick spray or line it with parchment paper. Melt the butter called for in a large bowl and then combine it with the vanilla extract, cake mix and eggs in a large mixing bowl. When you have your ingredients combined, split the batter evenly into two separate bowls. Add in several drops of red food coloring into one bowl and the blue into the other. Mix the food coloring so that you have one bowl of red batter and one bowl of blue. Drop a spoonful of the batter into your hand after spraying your hands with non-stick spray and roll it into a ball and set on your cookie sheet. You can also drop the dough directly onto the cookie sheet and shape it into a round ball shape with your fingers.

Cook cookies for 9 minutes. Remove them from the oven, let them cool for one minute and then move them to a cooling rack. Once completely cooled, spoon frosting onto the back of one cookie and then top it off back to back with a cookie of the opposite color, making a 4th of July Cake Mix Whoopie Pie.

Ingredients

Whoopie Pie Cookies

  • 1 box French Vanilla cake mix
  • 8 tablespoons butter melted
  • 2 eggs
  • 1 teaspoon vanilla extract
  • Red and Blue gel food coloring

Whoopie Pie Filling

  • 3 cup powdered sugar sifted
  • 1/3 cup butter softened
  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons milk or heavy cream

Instructions

To Make Buttercream Frosting

  • In a large bowl combine sifted powdered sugar, vanilla extract, butter and milk and beat until light and fluffy.

  2. Can you tell me how many cookie how many cookies this 1 box makes? I want to make these as minis for a potluck on the 4th and need at least a tray full. So if i know how big and how many this recipe makes i can adjust accordingly. Also wanted to add that if you mix frosting with a jar of marshmallow whip it tastes almost just like whoopie pie filling! Thanks for a reply, the insiration and the smiles from totally *understanding* the over love of certain holidays!!

    1. Hi Cassandra!! I usually use one box and if I roll the cookies into the size a bit larger than a quarter, I usually get around 20 whoopie pies so if you need more than that, you might want to grab two boxes and make two batches. It really depends on the size of cookies you want.. little minis will definitely go farther and these are pretty rich so unless you want people hanging from the ceiling (like I do to MY co-workers), mini are the way to go! And wow!! .. thank you for the marshmallow tip!!! .. I had no idea!!! Learning these things from my readers is my favorite part of running this blog.. besides, us ‘Holiday Girls’ need to stick together 🙂
