Ingredients

  • Apple Filling
  • 2 tbl butter
  • 2 large Granny Smith Apples , peeled and sliced
  • 1 tsp vanilla
  • 3 tbl sugar
  • 1 tsp cinnamon , ground
  • 1/8 tsp nutmeg , ground
  • 1/4 tsp salt
  • 1/2 tsp cornstarch
  • Juice of 1/2 lemon
  • 1/2 cup marscapone cheese or cream cheese
  • 1/4 cup walnuts , chopped
  • French Toast
  • 1 " thick slices day old Challah or Brioche bread , 8 slices
  • 1 1/2 cup half-n-half
  • 5 large eggs
  • 1/2 tsp salt
  • 3 tbl sugar or honey
  • 4 tablespoons butter

Instructions

  • Whisk together the half-and-half, eggs, sugar/honey, and salt.
  • Pour custard mixture into a pie pan and set aside.
  • In a small saucepan over medium combine the butter, apples, vanilla, sugar, spices, lemon, cornstarch and salt.
  • Stir until butter and salt have melted then add in walnuts.
  • Remove from heat and let sit for 10 minutes in refrigerator to cool.
  • Once apples have cooled, stir in marscapone cheese.
  • Using a fork, pile apple mixture evenly on top of one piece of bread, enough to cover. Top with another piece of bread, making a sandwich.
  • Dip the sandwich into the custard, first one side down and then the other.
  • Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place one sandwich at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side.
  • Remove and serve immediately or keep warm in a 200 degree oven until ready to eat.
