1" thick slices day old Challah or Brioche bread, 8 slices
1 1/2cuphalf-n-half
5large eggs
1/2tspsalt
3tbl sugar or honey
4tablespoonsbutter
Instructions
Whisk together the half-and-half, eggs, sugar/honey, and salt.
Pour custard mixture into a pie pan and set aside.
In a small saucepan over medium combine the butter, apples, vanilla, sugar, spices, lemon, cornstarch and salt.
Stir until butter and salt have melted then add in walnuts.
Remove from heat and let sit for 10 minutes in refrigerator to cool.
Once apples have cooled, stir in marscapone cheese.
Using a fork, pile apple mixture evenly on top of one piece of bread, enough to cover. Top with another piece of bread, making a sandwich.
Dip the sandwich into the custard, first one side down and then the other.
Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place one sandwich at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side.
Remove and serve immediately or keep warm in a 200 degree oven until ready to eat.
