Beef Stroganoff.  Just those words alone smother you in a blanket of warmth and goodness… and makes you hungry!!  I think it’s safe to say that many of us grew up on the good ol’ boxed “Helper” version of beef stroganoff.  Brown the hamburger, add the powdered envelope, pour in some milk and reach for the stars!!   I have always loved this dish but somehow I have always been too intimidated to try making it myself.. I thought it was hard to make .. very time consuming .. easy to mess up…. I was WRONG WRONG WRONG!!  And while that boxed dinner fed me for years (hello again, first apartment and my very own 13″ tv) and it is one that I would probably still enjoy, what I am about to share with you will blow that version of beef stroganoff out of the proverbial stew pot!

I don’t know about you, but as the weather starts to cool off this time of year, I start craving comfort food.  Heavy, steamy, not so figure friendly bowls of deliciousness to keep the cold out and the cozy in.  People who know me are going to laugh when they read that last statement because I don’t even live anywhere near where it gets cold. I live in Florida so what that translates into is, when it hits about 75 degrees outside with low humidity… yup, fall has arrived!!  Basically, when the Halloween decoration go up, the crock pot comes out.. even if I am still wearing shorts and a tank top.  Call it an extreme case of wishful thinking but the bottom line is that there is nothing better than coming in from a cold outside and walking into that wall of warm Smell Good from whatever has been bubbling away in your slow cooker all day.  That is truth!.. no matter what part of the country you are in .. lol!!

Beef Stroganoff

You will need:

1-2 lbs of stew meat
1/2 large onion – chopped
1 can Golden Mushroom soup (10.75 oz)
1 can Cream of Onion soup (10.75 oz)
8 oz cream cheese
8 oz sour cream
1 can sliced mushrooms – optional
1/2 tsp pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp red pepper

Large bag of pasta (approx 6 cups)

Get ready to be blown away by how easy this is to make. Add your meat, onion, cans of soup, mushrooms and seasonings to your slow cooker and combine. Turn your slow cooker on low (cough! .. um .. make sure it’s PLUGGED IN… not that I have done that or anything) and walk away. All done!

Seriously, it’s that easy! I love crock pot meals because you can start them before you leave in the morning and when you come home at night you have a delicious meal waiting for your. Stir your mixture periodically and we all know that the longer you let it go, the more tender the meat. I let mine cook for about 8 hours and it came out perfect. Once it was done, I stirred in the cream cheese and sour cream and let it simmer for another 30 minutes to give the cream cheese time to melt in. While that was finishing, I boiled up my pasta and when that was ready, I served up a big steamy scoop of meat sauce over and my noodles and sat down to watch some football. It came out amazing!! The meat was tender and flavorful and the sauce was hearty and would warm you up on the coldest of days… even if your coldest day is only 75 degrees outside.
