The holidays bring so many amazing things to us .. family, friends, good cheer and GREAT FOOD!

It also brings stress, credit card debt and having to navigate around horrible drivers but let’s focus on the positive, shall we?

No matter what your beliefs, taking time out of our busy schedules to appreciate our blessings and give back to those less fortunate is the reason for the season. Spending time with family and friends is so important and in this house any excuse to gather everyone together and share some grub is a monumental event.

But let’s be honest for a minute … those holiday dinner tables sometimes have a tendency to always look the same. I’m not taking about the place settings or the centerpiece, I’m referring to the FOOD! You know what I mean.. everyone has a favorite dish that just NEEDS to be on that table. Whether it’s Uncle Bob’s love for Apple Cranberry Relish or Aunt Sue’s insistence on bringing her famous sweet potato casserole each year, a lot of the same favorites are being served up year after year. And that is OK.. that’s what tradition is all about. If you ever want to see a holiday fight start among the most loving of families, burn the macaroni and cheese one year and see what happens.

Trust me, Armageddon has nothing on THAT!

So what is the Hostess with the Mostest supposed to do to freshen up the usual holiday fare? Two words… Stuffing Muffins. Yes, you read that right.. Stuffing Muffins. Now this entire concept completely confused my husband and he had no idea what I was talking about when I said I was making them. See, its working already!!!!! Surprise, surprise, surprise!!!

This idea couldn’t be any easier and is a perfect way to add a fun little twist on a holiday favorite. Try this with your favorite stuffing recipe and I promise your family will love them. The stuffing recipe that I have listed is the recipe that has been handed down from my own mother (except the cranberries.. I lay claim to adding those in) but everyone has their own tried and true recipe so feel free to use your own. Any way you do it, these Stuffing Muffins are sure to be a huge hit around your next holiday table.

P.S. – These are also awesome to use for Next Day Stuffing Waffles. Just sayin’ …

Ingredients

  • 3 stalks of celery , diced
  • 1/2 large sweet onion , diced
  • 6 scallions , diced
  • 1 pound breakfast sausage
  • 1 cup dried cranberries
  • 1 12 oz bag of stuffing cubes
  • 2 tsp dried sage
  • 1 stick of butter
  • 4 cups chicken broth
  • 1/2 tsp salt and pepper (each)
  • 1 tsp poultry seasoning
  • 2 eggs

Instructions

  • In a large skillet over medium high heat, brown breakfast sausage until no longer pink, drain grease and transfer sausage to a separate bowl
  • Reduce heat to medium and add butter to the skillet and once melted, add in celery and cook for 2 minutes. Then add in onion and cook for another minute.
  • Add the sausage back into the skillet with the stuffing cubes, sage, poultry seasoning and the chicken broth. Stir to combine.
  • In a separate bowl, whisk together the eggs and add into the stuffing mixture. Stir in scallions, eggs and cranberries until everything is well combined.
  • Lightly grease regular sized muffin tins with non stick cooking spray and preheat oven to 375 degrees
  • Using a large spoon, press the stuffing down into the tins to ensure they keep their shape then mound up the stuffing so it has a 'muffin top'
  • Bake until set and crisp on top, 10 to 15 minutes.
  • Remove to a platter and serve hot or room temperature.
