Candied Lemon Add-In

tbl fresh lemon juice
Instructions
Candied Lemon Slices
In a saucepan over low-medium heat, combine sugar, water and lemon juice and simmer until sugar is melted
Slice lemons into 1/4 inch slices and remove any seeds - add lemon slices to sugar water and lay in a single layer - simmer for 15 minutes
Remove slices to a parchment paper lined plate and let cool for 30 minutes - move to freezer for 20 minutes
To make the Mini Pies add cream cheese to a medium sized mixing bowl and beat until light and fluffy
Add in Dannon® Light & Fit® Strawberry Cheesecake Greek Yogurt, instant pudding mixes, drink concentrate, food coloring and Reddi-wip®. Mix until well combined
Move mixing bowl to refrigerator to chill until candied lemon slices are firm
Once chilled, remove candied lemon slices and remove rind - dice and stir into pie filling. Save a lemon slice for garnishing
Spoon pie filing into Keebler® Ready Crust® Mini Graham Cracker Pie Crust and top with Reddi-wip® and a candied lemon wedge
Serve immediately and enjoy!
