Cheese tortellini in a creamy, cheesy white sauce with meaty chunks of ham and a sprinkle of chives. The perfect quick meal to entertain with, serve your family or just treat yourself.
There is something to be said when you have The Recipe in your magic book of tricks. You know the one, the recipe that everyone loves, the one that no one can get enough of and best of all it falls under the heading of ‘One Pot Quick Meal’.
Yup… now we are on the same page!
You know the drill.. what am I going to make for dinner? As I wandered aimlessly up and down the aisles of my local grocery store without finding any relief, my attention turned to sale items. At my favorite grocery hangout, they are a girls best friend when it comes to Buy One Get One Free or BOGOs. So there I am,
loitering flipping through the weeks flier when I see that tortellini is on sale. I LOVE LOVE LOVE tortellini and often walk past it though due to it not being the most figure friendly of items. But if it’s a BOGO, how do you turn that down? Isn’t that rude? Here is my very friendly chain grocery store doing it’s best to bring me quality items at is a discount. Isn’t it my job.. nay, my OBLIGATION … to support the sale of such wonderful and delicious specialty BOGO items?
As you can see, I’m really good and running a line of b.s. when it comes to justifying my love for comfort food.
So in when the frozen bags of tortellini… now to the sauce aisle. Husband and I are pretty predicable when it comes to this part, I like regular red sauce and he likes Alfredo sauce… from a jar. I have to point this part out because I myself have yet to find a pre-made Alfredo sauce that I like. I would rather make homemade sauce any day of the week but he likes the jar sauce well enough and it makes him happy. I look at it like this .. I make ridiculous homemade macaroni and cheese but you better believe that this girl of the 80’s still loves her processed, unhealthy, neon orange, blue box variety every now and again. I can’t judge him.
But…. what if I surprised him? What if I used some extra brain power and made him something new? Something amazing? Something to say Thanks for all the hard work he does for me?

After scrolling down for a few seconds, I found Ham and Cheese Tortellini by Kevin and Amanda. It was just what I was looking for. Cheesy, quick and the pictures were to die for! I was drooling right in the middle of Aisle 3!! I knew I would be putting my own spin on their amazing recipe but Oh My Gosh, you really have to check their site out. So many great recipes!!
So I scampered home and added a little of this and a little of that, all the while yelling at him to get ready because he was going to need to take pictures of this amazing meal the second it was done because… well, .. I was really, really hungry at this point and there was just no way that this recipe was going to fail.
Fast forward 20 minutes and I was INSTRUCTED that this recipe was to be added into our weekly rotation of dinners.
Guess it’s time to renew that gym membership … lol …

- 2 tbl butter
- 1/3 large onion , diced
- 1 1/2 cup (12 oz) of ham, cubed
- 4 cloves garlic , minced
- 1 3/4 cup water
- 1 chicken bouillon cube
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1/4 tsp pepper
- 2 19 oz bags frozen tortellini
- 8 oz heavy cream
- 2 tbl sour cream
- 1/4 cup grated Parmesan cheese
- 8 oz shredded Italian cheese mix
- 1/8 cup chives , diced
Start by melting butter over medium heat in a large skillet
Add in the onion and saute until softened
Add in ham cubes and saute until lightly browned
Add in garlic and saute for 1 minute or until fragrant
Stir in water and bouillon cube and increase heat to medium high. Continue to stir until cube dissolves
Add in both bags of frozen tortellini and bring back to a boil. Cover and let simmer 10-12 minutes or until past is al dente
Turn off heat and pour in cream, sour cream, spices, Parmesan cheese and shredded cheese.
Stir to combine and add in chives right before serving
