Chicken is something that gets made in one form or another at least 4 times a week in my house hold. Whether I am doing a casserole like Tuscan Chicken Pasta , Perfect Chicken Parmesan or Easy Chicken Tortilla Soup, one way or another yard bird is being served up when it comes to dinner most nights of the week.

This simple chicken recipe works on on many different levels.. here’s why!

  • Flavor – When you think of baked jalapeno poppers, you think cheese and heat. This chicken breast is stuffed with all the best popper flavors.. cheese, jalapeno and crispy bacon.
  • Easy – When it comes to fast chicken and bacon recipes for dinner, it gets no easier than this jalapeno popper chicken breast. Mix your filling, split your chicken, secure with a toothpick (or skewer!) and bake. The perfect 30 minute meal!
  • Heat – You control the heat element when it comes to this jalapeno chicken recipe. Looking for a mild jalapeno flavor? Use 1 or 2 jalapeno peppers? Want more flavor? Grab 4 or 5 peppers for more pepper flavor.
  • Kid friendly – Have little ones or picky eaters? Mix your filling without the jalapeno peppers, stuff the kids chickens first and then go back and add the diced jalapenos to the stuffing mix before stuffing your chicken breasts.

Jalapeno Popper Chicken Ingredients

  • Jalapeno Peppers – Jalapeno peppers bring the heat and the spice to this chicken breast recipe. Want a mild flavor? Add just a couple of diced peppers but if you want more heat, grab 4 or 5.
  • Goat Cheese – Creamy, tasty and thick, goat cheese is the perfect medium for stuffing chicken.
  • Cheddar cheese – Shredded cheddar cheese is tangy and sharp. Perfect for cheesy chicken dinner recipes!
  • Crispy bacon – …. it’s bacon…. nothing more needs to be justified.
  • Parmesan cheese – Parmesan brings sharp flavor and saltiness to the party.
  • Seasonings – Onion powder, garlic powder and salt.. all must have flavors.
  • Chicken breasts – Be sure to grab chicken breasts that are a bit on the thick side, if possible. You want to be able to halve your chicken easily.

How Do You Make Jalapeno Poppers Chicken?

Preheat and prep – To make your Jalapeno Popper Stuffed Chicken , start by preheating oven to 375 degrees. Line a baking sheet with parchment paper or spray a baking pan with non-stick spray and set aside.

Dice jalapeno peppers – Cut off the top of the pepper and slice lengthwise. Using a spoon or knife, remove the ribs and seeds. Add to a small food processor and pulse to dice or slice in small ribbons and dice using a sharp knife. Wash your hands with soap and water before touching anything else (especially your eyes!).

Slice the chicken – Rinse and clean your chicken breasts. Using a sharp knife, slice horizontally through the middle of the chicken breast, cutting to but not through the other side.

Mix the filling – Add goat cheese and most of your cheddar cheese, diced jalapenos and bacon pieces to a medium sized bowl and stir to mix. Ingredients held out will be for garnishing the top of your chicken breasts.

Stuff the chicken – Fold the chicken breast open and spread a generous portion of your stuffing mixture on the crease of the butterflied chicken breast, spreading out towards the edge. Fold the breast over until both sides meet again and toothpick (or skewer!) the breast together to hold in the stuffing ingredients.

Sear – Season the breast generously both sides with salt, onion powder and garlic powder mix. Add oil to a skillet or oven safe pan. Heat over medium high heat and sear chicken breasts for 2 minutes each side.

Bake – Sprinkle tops of your chicken with remaining cheddar cheese, bacon and diced jalapeno. Move pan to the oven (or transfer to a baking pan if not oven safe) and bake for 15 – 20 minutes or until your chicken breast reaches an internal temperature of 160°F. Remove from oven and let set for 5 minutes before serving. This is how to cook a stuffed chicken breast in the oven.

How To Keep Stuffed Chicken Closed?

If you are asking yourself how do you keep a stuffed chicken closed, do yourself a favor and find yourself some of these 4 inch skewers.  They work so much better than toothpicks!!!

Simply use the skewer and thread it through where the folded over sides meet, bringing both sides together to secure the filling.

Pro Tips for Perfect Jalapeno Popper Chicken

  • Not a fan of jalapeno peppers? No sweat! Substitute the jalapenos with green, red or yellow peppers instead for a mild flavor.
  • Goat cheese can be substituted with cream cheese if you prefer.
  • Using a small food processor to dice the jalapeno peppers is a huge time saver and so much easier than doing it by hand.
  • If cooking your bacon, be sure to allow time for your bacon to cool down before adding it to you stuffing mixture. If you don’t have time to cook bacon, grab a bag of pre-cooked bacon from the salad dressing aisle of your grocery store.
  • Next time you are in the grocery store and see 4″ bamboo skewers, grab them! They are so much easier to work with than regular toothpicks.

    Good luck with your veggie garden – peppers thrive really well in hot climates. Stuffed chicken with cheese and jalapeno sounds like the perfect recipe to use those home grown jalapenos. Good share.
