As a girl who loves the song but once hated disliked pineapple, I lived most of my adult life living the lie that Pina Coladas were never to be my umbrella drink of choice.

A one week long cruise the Caribbean changed my mind DRASTICALLY when it comes to this creamy, tropical, spear some fruit with a paper umbrella and stick it in my glass gift from above… I have been converted!!!!

Fast forward to main land and reality … life is not a week long Caribbean cruise and 7:00 AM comes fast.

As previously discussed in my Meal Prep Breakfast Sandwiches post, my usual breakfast fare is still a cheese stick and an XL coffee from Dunkin’ Donuts.

However, my well established and obviously well thought out breakfast routine is taking a back seat to this Tropical Pineapple Coconut Smoothie… and yours will too!

HOW TO MAKE PINA COLADA SMOOTHIES

Add pineapple, yogurt, milk and ice to a blender and and blend until smooth. Serve immediately.

PRO TIPS FOR SMOOTHIES AT HOME

  • Use any coconut flavored yogurt you like. I personally love the Dannon Light and Fit Toasted Coconut Vanilla Yogurt but grab whatever you prefer.
  • Breakfast smoothie recipes should not be complicated. Don’t have coconut milk, use regular milk, skim milk, almond milk as a tasty substitute.
  • Want to add even more creaminess and a bump of nutrition? Add in half of banana for extra flavor and creaminess. Don’t worry, the tropical flavor of your smoothie won’t be overpowered by banana flavor.
  • Throw your pineapple chunks in the freeze ahead of time and use less ice for a more concentrated pineapple flavor.
  • If you have any coconut water on hand, fill up an ice cube tray and freeze until solid.  Add your coconut ice cubes to your blended smoothie for extra coconut flavor.
  • If you looking to limit your sugar intake, be sure you use unsweetened coconut milk and unsweetened frozen pineapple chunks for this recipe. Look for them at local health food or natural food supermarkets.

  • 5 ounce container of coconut flavored yogurt
  • 2 cups pineapple fresh, frozen or canned (with juice)
  • 1/2 cup refrigerated coconut milk
  • 1-2 cups of ice
  • Paper umbrellas not required by highly suggested

    Thanks for posting this recipe. I’ve recently purchase some cans of coconut milk and have been trying to figure out how to use it. This will be my first go with the “new milk”.

Noel, you know it’s going to be a good day when you have a 1979 hum-dinger of a song like that REPEATING in your head 🙂 I’ve been trying to find new ways to use coconut milk too and adding the canned milk into this recipe would be outstanding. I used the non-dairy refrigerated kind because I didn’t have any of the canned milk on hand. What a wonderful upgrade!!!
