See? Without even trying THAT SONG starts playing in your head, doesn’t it? Now you are humming it just a little bit… singing the chorus with just a little too much ommph! … Just so you know, that song will play repeatedly non-stop in your brain for the rest of the day.

As a girl who loves the song but
hates dislikes pineapple, I lived most of my adult life living the lie that Pina Coladas were never to be my umbrella drink of choice. But as most of us over the age of 21 can attest to, tastes change in all areas … food, drink and otherwise. And while I still hate dislike pineapples, one week long cruise the Caribbean changed my mind DRASTICALLY when it comes to this creamy, tropical, spear some fruit with a paper umbrella and stick it in my glass gift from above… I have been converted!!!!
Fast forward to main land and reality … life is not a week long Caribbean cruise and 7:00AM comes fast. My usual breakfast fare is still a cheese stick and an XL coffee from Dunkin’ Donuts… the sun rises, trees are green, the IRS is not your friend and no one should ever wear a red spandex tube top in public… along with these truths is that I like my cheese stick / XL DD combo and I am not trying to change up my well established and obviously well thought out breakfast routine for any reason.
There is nothing wrong with adding TO IT. Smoothies have been my friend for a long time, I love them and the only reason why they sometimes fall by the wayside of my mornings is that I stay up too late working (aka taking to YOU) and then I get up too late the next morning to run a Ninja and make early morning magic before herding the dogs outside to go potty and then back in so I can run off to my J.O.B.
But I am trying … trying … and now that I have THIS Coconut Pineapple Smoothie recipe, well let’s just say I am winning the fight for a healthy breakfast add on more and more.
** Let’s just cover one point … this breakfast Coconut Pineapple Smoothie is alcohol free .. most places of employment frown upon their staff showing up to work in the morning intoxicated … plan accordingly 🙂

- 2 5 oz mini tubs of coconut flavored yogurt
- 2 cups pineapple , fresh, frozen or canned (with juice)
- 1 cup refrigerated coconut milk
- 1-2 cups of ice
- Paper umbrellas not required by highly suggested
Add yogurt, fruit, milk and ice to blender and blend until smooth.
