This spicy, creamy Red Pepper Pasta dish is quick to put together and perfect for a busy weeknight meal.
Inspiration comes at the weirdest times. When you know you have a deadline or an important meal to plan and you are trying to be magnificent and create a new magical dish that will WOW the entire world with your brilliance and creativity… that’s usually when you end up beating your head against the counter and praying you have enough Ramen packets in the pantry. Standing in a clothing store, looking at a shirt with a purple rhinestone elephant on it?… Red Pepper Pasta with Chicken explodes into your brain and you leave the ugly elephant shirt behind and rush home, rudely tailgating innocents and yelling at Grandma to get out of your way, all the while trying to remember every part of the recipe your brain exploded into itself so you will not forget even the smallest of ingredients.
Life’s fun like that.
That is EXACTLY how this recipe came to exist. All I can say is thank goodness Big Scary Mike wasn’t with me (he has no patience for ugly rhinestone elephant anything) because there would be no way he could have kept up with me as I ran out of the store and I would have had to go back for him later. Or send someone to pick him up. Either way, it goes without saying that I would have to listen to weeks of guilt inducing comments centered around ‘abandonment’ and ‘marital vows’.. blahblahblah …. he doesn’t quite understand the importance of MUST COOK NOW so any explanation from me would have fallen on deaf ears and empty stomach.
But back to what is important… This dish is amazing! It is creamy and spicy and very fast to put together. This is perfect when you are in need of a comfort meal fix or if you are serving company. Dress it up or strip it down, serve it with chicken or sausage or even seafood or even add in vegetables, any way you serve it, this meal is a winner.
Red Pepper Pasta with Chicken
Start by preheating your oven to 375 degrees. Generously season your chicken tenders with Creole seasoning and space them out on a cooking sheet sprayed with non stick spray.
Bake for 14 minutes and then remove and set aside.
Bring a large pot of salted water to boil and add in your pasta.
Cook according to package instructions and save 1 cup of cooked pasta water. Drain and set pasta aside.
In a large pot, saute garlic and sun-dried tomatoes in olive oil for 1 minute.
Add in your cream and bring to a low boil. Then add in the cheeses, seasonings, basil, sour cream and scallions.
Add in half of the reserved pasta water and stir until your sauce reaches the consistency you like.
Stir in your pasta, chicken and top with steamed broccoli. Season with salt and pepper to taste.
This meal moves FAST and is perfect for a busy weeknight meal. It is a spicy dish so if you have someone in your house who doesn’t care for the heat, simply reduce the amount of red pepper flakes you use.
