I am so late! In the food blogging world, you should be posting recipes two months ahead of when you really want them. That means that St. Patrick’s Day recipes like this amazing Slow Cooker Guinness Irish Stew should have been written, tried out, revised, blog post written, pictures taken, pictures edited, revised blog post and finally published back in January.
So here we are five days before St. Patrick’s Day and even though I am horribly behind schedule, I am bringing to you this amazing recipe for Slow Cooker Guinness Irish Stew. What can I say, I am just really running behind this year. So my tardiness is bad for me but amazing for you, dear friend. Let me tell you about this dish!

Now as I have mentioned before in my Guinness Bangers and Mash post and my Irish Soda Bread post, St. Patrick’s Day is a huge deal around my house. It has been for years and it is second only to Halloween on my very short list of favorite holidays. Now usually I am not home on St. Patrick’s Day, I’m usually out having a good time and publicly embarrassing my husband but that doesn’t stop me from enjoying good food on this green and gold day of celebration. What’s more, this amazing Slow Cooker Guinness Irish Stew is done in your slow cooker which means it’s perfect for when you have friends over to join you for a Saint Patrick’s Day celebration and it’s also so easy and convenient if you are going to be out on the town because it will do all the hard work and be waiting for you when you come home.
This is a classic stew recipe with a Guinness Irish twist to it. It is rich, hearty and will bring any celebration to life!
This recipe was not originally on my list of culinary creations to bring to life. I already had 3 or 4 recipes and mind to write and try to make . Then a friend of mine threw this idea into the ring and I just had to pick it up and run with it. What could be more perfect than the dark richness of Guinness mixed with the heartiness of a slow cooker stew? I will admit, I was a bit nervous, Guinness can be a very strong flavor and although I love to partake in it on St. Patrick’s Day, I had never cooked with it before. I have to say, I think this was the perfect meal to try my hand at complimenting the amazing flavor of Guinness and really explore what it can bring to a dish.

- 2 lbs beef brisket , cut into 1 inch cubes
- 2 tbl olive oil
- 12 slices bacon , cooked and cut into small pieces
- 1 medium sweet onion , quartered
- 4 large garlic cloves , minced
- 2 tbl butter
- 5 tbl flour
- 2 1/2 cups chicken stock
- 6 tbl tomato paste
- 2 tsp salt
- 1 tsp pepper
- 22 oz Guinness Draught
- 4 carrots , cut into 1 inch pieces
- 2 parsnips , cut into 1 inch pieces
- 4 cups small yellow potatoes , cut in half
- Parsley for garnish and good crusty bread
Start by heating a large stock pot over high heat on your stove top
Add in olive oil and brisket pieces, working in 2 batches. Brown all sides of beef, remove and repeat with 2nd batch. Remove and add all brisket into the bottom of a slow cooker set to Low.
Lower heat of stock pot to medium high and add in the bacon pieces. Cook until crisp and remove pieces with a slotted spoon to the slow cooker
Add in 2 tbl of butter to the bacon grease and then add in quartered onions. Brown onions just a bit and then add in minced garlic, stirring constantly.
Add in flour, whisking constantly for 1 minute and then pour in chicken stock.
Add in tomato paste and stirring to combine, bring to a low boil.
Pour in Guinness and simmer for 2-3 minutes.
Pour into slow cooker and add salt, pepper and vegetables
Cook for 8 - 9 hours on Low or 4 - 4 1/2 hours on High
Serve with crusty bread and parsley for garnish
