Strawberry Cake Mix Cookies are are soft, moist and easy to make with everyday ingredients you already have in your pantry.
Sometimes when life gets too busy or maybe a little too hectic, you need a quick easy recipe for something sweet. Maybe your child informs you that they need cookies for class tomorrow or maybe you remember last minute there’s a potluck at work the next day or maybe you just really need something sweet to indulge yourself with and you just don’t feel like changing out of your yoga pants and frumpy t-shirt to go to the store.
That last part is usually me.
These Strawberry Cake Mix Cookies are fast, easy and you probably have all of the ingredients you need already in your pantry. Seriously, there is not an easier cookie recipe out there!! Strawberry Cake Mix Cookies are also great for Valentine’s Day so keep that in mind when you are thinking something to surprise your friends and family with. And let’s be honest, homemade cookies will always be the winner of boxes of mystery chocolates.
Now this recipe is not mine but I couldn’t tell you whose it is either. If you go on Google or Pinterest and type in “cake mix cookies” you will find a thousand different listings for this same recipe. It’s a classic and to be honest I can’t assign ownership to it. But all that being said, you will not be disappointed in these, regardless of how easy and few ingredients are required. These cookies are soft, moist and full of yummy flavor. So go ahead and grab a cake mix out of your pantry and give these a try.

- 1 box Strawberry cake mix
- 8 tbl butter , melted
- 2 eggs
- 1 tsp strawberry extract (optional but suggested .. I've also used Raspberry in a pinch)
- Neon pink food coloring (also optional)
- 1/2 cup sugar
- 1 cup powdered sugar
- 1 tbl corn starch
Preheat your oven to 375 degrees and spray a cookie sheet with non-stick spray.
In a small bowl combine the powdered sugar and cornstarch and in a separate bowl add in regular sugar and set aside ... these are both for rolling your cookies
Melt the butter and in a large bowl, combine with the cake mix and eggs.
When you have your ingredients combined, add in several drops of pink food coloring and the strawberry extract and mix it in.
Drop spoonfuls of the dough into the regular sugar and roll dough around until coated and lightly roll with your hands into a ball shape
Transfer dough blob to the powdered sugar and roll around until covered in powdered sugar and set on your cookie sheet.
Cook cookies for 9 minutes.
Remove them from the oven, let them cool for one minute and then move them to a cooling rack.
